I got it because it's a vegetarian cookbook - I have a mild case of Reactive Hypoglycemia, but I've found that it's very manageable through diet and exercise. This cookbook is a great place to find tips and recipes for a healthy lifestyle even if you don't have hypoglycemia. Actually, it would be perfect for someone who is trying to explore vegetarianism.
The beginning of the book has a brief intro to some of the ingredients that are called for in the recipes, and there is also a page of simple snack ideas (bread and peanut butter, fruit, etc...).
Then Stephanie jumps right into the recipes. They are all pretty straightforward and easy to follow. Her directions are clear and there aren't any huge ingredient lists. You definitely don't have to be an expert to make any of the recipes. There are a bunch of different sections - fast food (healthified), treats (my favorites!), "vegetarian specialties" (like lasagna, enchiladas, quiche, etc...), breakfasts, and slow cooker recipes.
My favorites so far have been the "Harvest Soup", "Flaxseed French Toast", "Grilled Portobello Mushrooms", "Strawberry-Poppy Seed Salad", "Key Lime Pie", and the Sweet Potato Fries (holy yum). I had to leave out the nuts from the French toast (didn't have any), but it was still great. I added a little bit of cinnamon to the Sweet Potato Fries too - these were really good.
Some of the recipes are what I would call "semi homemade" - meaning that they call for pre-made ingredients like frozen sweet potato fries, or veggie burgers. When I made the fries I just used regular sweet potatoes; I don't usually buy the packaged stuff. But I think most of the recipes you could easily sub in other things if you don't have whatever product it calls for - like how I just subbed fresh sweet potatoes.
Overall, a fun book with lots of good ideas. I highly recommend it :)
