This book has one foot in the kitchen of an Indian housewife and the other in that of a Take Out restaurant. In both kitchenscookbook are straight from the supermarket shelf. there's no question of grinding herbs and spices here. these recipes are prepared in minutes with dried herbs frozen pastes boiled meats or vegetables. This is a fast food approach. Gone are the hours of preparation. Ten years ago an Indian housewife would have railed at any young cook who broke with the traditional family methods. Today we can enjoy the more relaxed approach of good curry cooks and be taught by them how to prepare a curry in no time at all. Because everything today is becomingso too has the Indian Kitchen
