Perhaps "Don't Panic, dinners in the freezer" would be a better selection. This book is a misnomer- it doesn't help you plan ahead for more than 24 hours. Anyone can figure out to do their prep work in advance then store the food in the fridge. Other negative aspects
1. no photos
2. recipes include things like "Cheese Whiz"
3. directions are for one meal at a time, (to save time- I like to make more than one meal)
4. very large type (could be a plus for some people- it make me dizzy)
5. baking instructions are for odd sized pans
I will donate this book to the library- not worth the shelf space.

I purchased the first version of this book and use it constantly. The refried beans, Spaghetti Sauce, Pulled Pork and Teriyaki Chicken are always in my freezer. The bread rarely makes it to my freezer, and is an absolutely fabulous sandwich slicing bread. I have had a few questions and Jenny has been quick to reply to my emails.
This book has been such a staple in my home that I purchased it for my sister and sister in law, knowing they would love it too.
These methods just make sense, they aren't too overwhelming and they make life easier...especially at the 5 o'clock hour.

It does contain many very healthy recipes (which, I know some others do not, so this may be just what you're looking for), however, they're simply NOT things I could get my family to eat.
Spaghetti sauce with mashed winter squash and flaxseed? Besides, I already know how to freeze spaghetti sauce. Then nachos and burritos made from the same spaghetti sauce? Mexican and Italian foods have *very* different flavors in this household, there's no sneaking that past my pre-schooler.
A recipe for a veggie platter "to munch on all week?" I already know how to cut up veggies and offer them as snacks. And, how this is *so* different from the crudites 'recipe' elsewhere as to justify it's own 'recipe' I don't know.
Quinoa and Carrots? Sesame Fish Cakes with Baby Bok Choy? Lentil Quesadillas with Smoked Almond Apple Salad? They don't save me any time if my family has no interest in eating them.
Lots of menu charts and a good work schedule, as well as shopping lists - IF all the recipes pre-choosen for that week work for you. I suppose if you're *really* time crunched (and eat *very* healthfully!) this could be helpful. Since there are few recipes I can pick and choose from in this one, they really don't help me out at all.
It was the Lemony Baked Shrimp recipe that 'lured' me in, and while I still think it sounds great, I wouldn't have bought the book just for that.
I have found Don't Panic - Dinner's in the Freezer to be FAR more family (read: child!) friendly, with MANY more options that appeal to all of us.

I like the concept of making meals ahead and having them in the freezer for those busy times or when I just don't feel like cooking. An issue I've had with some make-ahead cookbooks is that so many of the recipes rely on canned condensed "cream of" soups and other processed ingredients, and end up being high in fat, starches, and sodium.
This cookbook is different with its focus on real, healthier ingredients, all of which can be found at any larger grocery store. The recipes themselves are not complicated so cooks of any level will be able to master them. Included are casseroles, meats, poultry, and seafood; soups, stews, and chilis; side dishes and vegetarian options, breads, rolls, and pizzas; appetizers, breakfast dishes, desserts, and sauces and condiments.
The book starts with helpful tips on freezing and organizing for a cooking session. While one doesn't have to spend an entire day cooking for a month, suggestions are given for making multiple dishes at the same time in order to have several meals ready for the week(s) ahead.
There are several recipes I look forward to trying, including an unusual butternut squash and chard lasgagne, three-bean Italian minestrone soup, turkey sausage and broccoli rabe calzones, low-carb mini quiche, creamy turkey casserole with broccoli and cauliflower, raspberry-lavender crumb cake, and dark chocolate mint cake. I did make a modified version of the All-Occasion Sloppy Janes recipe with good results.
There are many color photographs which always makes a cookbook nicer and although it isn't spiral bound, it does lay open while in use which I also appreciate. This is a cookbook I recommend for those who like to plan ahead and have meals ready in the freezer that are also healthy.

My husband has allergies to just about every preservative, artificial flavoring, artificial coloring, and any other food additive on the market. All the stuff you really shouldn't eat anyway. I cook from scratch mostly, and this book has been a wonderful addition to my kitchen.
Last night I made the chocolate syrup; almost all the chocolate syrups on the market have artificial flavorings. My family loves the chocolate pudding from scratch (just three ingredients -- did you ever look at a pudding mix box?), and my kids are so used to tasting my home-cooked meals that they think the processed meals are gross.
The money we save is great, but the time I save in the kitchen is even better. I highly recommend this book.

I love the original Don't Panic book and I'm loving this version too. I went through it as soon as it arrived and found 27 recipes I want to try "first" - I have had great success with the meals I've tried so far.
I am not a fan of the OAMC recipes - everything is bland and not to my taste. How much cream of mushroom soup can one family eat? Yuck.
I love that these recipes are varied and have spices use real, fresh ingredients and appeal to the whole family. The two Don't Panic books have changed my life. I always have something in the freezer to prepare for dinner or to share with a friend in need. I've probably given away or encouraged 30 people to buy the first book, and I would imagine that this one won't be any different.
I like that this book categorizes the recipes into healthier choices, quick and easy and company-worthy. It's a neat feature, but I don't base my company worthy choices on it. I've found that most of the meals are crowd pleasers!
Eagerly looking forward to the third installment!

This book purports to help you save time and money in the kitchen while enjoying a variety of foods. You may save some time following the processes outlined here, but you definitely won't save money. It is definitely NOT for the home cook who is on a budget.
The author gives several weeks worth of recipes for you to cook once and eat all week. Unfortunately, most of the weeks use the same ingredients over and over (and over). For example, there is fish week and out of the 5 menus given, salmon is the main dish in 3.
This book will also NOT help you save money--there is steak week where you are supposed to purchase *13* rib-eye steaks. (Hey--if I could afford to buy 13 steaks at once, I could also probably afford to pay someone to cook for me!)
Most of the other freeze-ahead cookbooks I have seen have practical advice on saving money and time at the grocery store. This book relies too heavily on expensive prepared ingredients (the author recommends buying pre-cooked chicken, for example, to save even more time). I can't recommend this for anyone trying to save money.

This cookbook is full of quick and easy and delicious recipes my family loves! I have made several dishes including the stuffed pork tenderloins and they were fabulous! And Judie Byrd has great ideas for breakfast, like smoothies and I love her idea for Breakfast Cookies! My kids think I'm giving them treats for breakfast and they are truly healthful!

I have over forty cookbooks, most supposedly geared for using long term food storage. Unfortunately, most use many fresh ingredients which may not be available. That leaves a couple of options, convert the fresh ingredients into dried ones or don't use the recipe. The great thing about this book is that it uses all long term food storage items. In addition to that the instructions are easy to follow and the food tastes great. I made up a couple of the dishes and shared them with a group of 50 people. They all loved them. This book embraces a whole new way of meal planning. Thank you! I can't wait to share this with my friends and family.

I originally bought this book for one or two recipes that was inside of it. My husband saw the Title and practically begged me to give it a go since this month (October) is our busiest month (I work a full time job, own another business and volunteer at a haunted house 4 nights a week) and he HATES cooking for just him and my daughter. SO, we started reading the "directions" on how to cook Once A Month - MAN! Let me tell you how super simple they have made everything!! Not only do they give you the shopping list, a staples list, AND several plans to choose from, they also tell you what ORDER to prepare them in! We decided to start with the two week plan just to see if it was for us!
This past weekend, my husband and I spent 1/2 the day TOGETHER in the kitchen, cooking as a TEAM and were able to turn out 14 meals!! We had a BLAST and even my 6 year old daughter got to help! So many new recipes (so far all have been truly amazing)- it was like discovering our kitchen all over again!
SO EASY - nothing complicated about preparation or cooking any of the foods - all basic skills and ingredients, save for a few spices that have now been incorporated to our cabinets.
We've really enjoyed being able to rush home after all of our crazy schedules and being able to have dinner on the table quickly instead of trying to figure out what to eat or where to grab something. I am definitely converting over to the OAMC club!

This is the fourth book in the "Cooking for the Rushed" series by Sandi Richard and I think the best. She is the expert on meal planning. She mentions that the most stressful part of the day is dinner, and I can believe that because so many of us don't start thinking about what's for dinner until 5 minutes till six. But she has developed a system to change that.
The book has 10 weeks of meal plans, each divided into colors. The red and yellow meals are dinners that can be prepared in under 30 minutes. The green and blue meals are dinners that can be prepared in under 60 minutes. The average family spends 38 minutes preparing dinner each night. But at a glance you could easily see which meals you could have enough time to prepare and get out of the house in time.
This cookbook has some very nice pictures (all recipes had a full color picture, what a treat!). There are vegetarian substitution suggestions. The pages are glossy so splatters would clean up somewhat easily. She also gives suggestions on which meals are "having company" type meals, crockpot meals, there are calorie and nutritional information provided, there's an equipment list so you'll know all the pots and pans you need, and there are also food exchanges. All is great information that many many cookbooks don't provide.
Her recipe for Mexican Hamburgers calls for 90% lean ground beef but you could easily substitute turkey or tofu. It was delish; I loved the avocado salsa. There are also make ahead (freezer) suggestions for this recipe for those who like to do weekend cooking.
Most of the recipes call for a full meal suggestion. The red snapper with pineapple salsa, pecan wild rice and asparagus is a complete meal. And it's all ready in under 30 minutes.
All of the recipes use fresh ingredients. I didn't see any packaged foods (bottled BBQ sauce maybe) so her recipes by naturally being healthier and less fat will most certainly cause weight loss. They are not specifically low-fat but that is the usual outcome when you stop eating fast-food and start cooking with fresh, natural ingredients.
There were no unusual combinations, I think most people would have kids who'd very easily try these meals. We had the crispy chicken and the kids just raved. The secret ingredient was crushed crispy rice cereal. The serving suggestions were baby potatoes seasoned with garlic herb seasoning and a side salad. All very doable in the evening. It cooked in the oven so we could do homework in the meantime.
Her main suggestion is to get all your equipment out as soon as you get home, start the water boiling, etc before changing clothes. I hadn't thought of this but I can see where this would be a big motivator to continue cooking once you changed. I've found myself returning from the bedroom and just sighing because I now had to drag out pots and pans and start cooking. While not a big deal in itself, it's easier to jump in the car and go to a restaurant especially when the kids are begging. But after a few of these meals the kids will be begging for more home cooking!
There are grocery lists provided broken down by category. Each week has 5 recipes for the week not 7, I saw in another review that bothered someone. I find it doable because at least one night you want to have pizza and another you're out and about anyway.
She also has spice combinations for those spices you don't want to pay extra for (i.e. pumpkin pie spice). She has all kinds of suggestions and cooking terms that would make this book excellent for a young family getting started.

Like an earlier reviewer, I found that this book really suffered from being poorly edited. However, the recipes are delicious and the fat has been sensibly trimmed from most recipes. You can easily modify recipes to take out even more fat by using techniques like using cooking spray in a nonstick skillet for sauteing onions. Everything I have made from this book has been great, although I am jotting down lots of notes in my copy of the book as I have modified things a bit to suite my own style and experience. For example, her Cheddar Chicken recipe uses a very lowfat cheese sauce which is made without starting with a roux (flour browned in butter). I found it helped to use Wondra flour mixed in a jar with some of the liquid, like you would for gravy, instead of just tossing everything in the pan. This could cause clumping. She also has a crustless quiche recipe, but I plan on cooking it in a premade pie crust, with the extra fat and calories. I think my family would prefer that.
I really like how she has organized her recipes into "mini-sessions" of 5 or 6 recipes grouped by protein type. So, for example, you might do a chicken (breast) session or a lean pork session in one afternoon or evening, rather than cooking for an entire month in one day. Slowly your freezer supply of delicious food will build up.
I really, really do like this book, and having checked many freezer cooking books out of the library, this is the only one I bought. My chief complaint, however, is that it appears to have been rushed into print, and I lay the blame for this on the publisher, not the author. (This is just my theory, no one has confirmed it.) The author is a nice lady who deserved to have had support from her publisher.
Here are the problems:
First, the shopping lists for each mini-session often list the ingredients in a different unit of measurement than they are listed in the ingredient lists in the recipes. For example, with the chicken breasts they are listed alternately by weight, number of whole chicken breasts, number of chicken breast portions (not immediately clear that these are different), and by cups of cooked and cubed meat. Chicken breasts vary considerably in their size, so buying them buy weight is more useful information for recipes where they are going to be cooked and cubed.
Second, in some cases, the preparation instructions seem to have been copied and pasted without editing--e.g., boil skinless, boneless chicken breasts and then remove the meat from the bone?
Third, the list of ingredients in the recipes are rarely listed in the order that the ingredients are used in the recipes. This is a convention that we cooks are used to, and it is disconcerting to have them listed out of order. A cook is more likely to make an error and omit and ingredient this way.
Fourth, as noted in an earlier review, there are instances where the amount of some ingredients is given incorrectly. All I can say is keep reading the reviews here, and hopefully all major blunders will eventually be listed. I keep hoping that the author will post some errata information on her web site (you can find it easily in a web search), but it has not happened yet. Debi, if you read this, pretty please give us a "known errors" page!

I made my first set of meals a couple weeks ago, and I've really enjoyed the benefits of this cooking method. However, I had a lot of trouble with the cookbook. Like a previous poster, there were so many errors in this cookbook. One of the recipes was missing an entire part of the recipe's directions, and I had to improvise. Also, I realized quite quickly that I needed to actually sit down and read every single recipe to make sure that all the ingredients and prep work processes had been recorded properly, because there were many errors there too. Most of the recipes have turned out great, but this book would be so much better if someone had just taken the time to really proof read everything. I plan to make another set of meals in two weeks from now, and I'm definitely going to use the recipes, but make the shopping lists myself, and read all the recipes to carefully record all the prep work involved, plus make sure I'm not going to be stuck with a half-missing recipe!!!

I bought this book a few months ago after a friend recommended it. My friend has a cooking partner and they've been cooking this way for well over a year now. My circumstances do not allow me to spend a whole day cooking meals, but I have used the ideas and recipes in the book to fit our family. Instead of spending a whole day cooking enough dinners for a month, I will make 2 or 3 meals' worth of a recipe when I do cook. I freeze what we don't eat and I've accumulated quite a good supply of meals that are in the freezer.
Tara and Nanci have developed quite a system. There are charts and worksheets that are extremely helpful. This book is not just a book of recipes that freeze well. It's chock-full of information and techniques. Also, 30daygourmet.com is their website and they have message boards (with the authors participating!) and if you own the book, you can see and print out an additional 50 recipes, set up just like the ones in the cookbook!
The ingredients are listed in quantities for one meal, then they do all the math and multiply out what you need for however many meals you want to make.
The recipes are very family-friendly and delicious. No strange ingredients that you would have trouble finding. Everything I've made from the cookbook has been WONDERFUL. I've made the Taco Rice (serve it with cornbread - yummy!), Crispy Baked Chicken, Saucy Oven Pork Chops (recipe from website), Cheeseburger Quiche (also from website), and Cheese-Stuffed Shells. I made 80 shells last time I made them and you freeze them in rigid containers and they don't stick together and to cook them, you just take out however many you need in the morning and put them in the fridge and at dinnertime, put them in a cooking dish with spaghetti sauce on the bottom (I use Ragu!) and cover with more sauce and bake. Absolutely delicious!
This is a great way to have homecooked meals without having to cook every night. I really enjoy doing it! God bless you, Nanci and Tara!
PS Nanci and Tara also do conferences where they give a demonstration of their cooking methods. I'd love to see one of those - they also have a great sense of humor! With 7 kids between them, they really know what it's like to have a chaotic dinner hour!
Cooking this way saves you time and money and gives your family great meals. I can see that this would be useful for anyone - from young singles or newly-married to families with children at home to empty nesters! You won't be disappointed with this book!

I'm adding this book to my list of gifts to give at Bridal Showers. If you're like me, you have days when you stare into the pantry wondering what to make for dinner. There's food in there but does it make a meal? With this helpful little book, I've been able to go to the cupboard and pull together a complete meal for my family without running to the store for missing ingredients. My two favorite ideas in this book are the Master Skillet Meal and Master Soup recipes. A bit of this, a dab of that, throw it all in the pot or skillet, cook for awhile, and dinner's served. I'll never buy those convenient pre-packaged boxed dinners for tuna or hamburger again!

Gordon, the Innkeeper of Nantucket House in Chatham on Cape Cod, has collected recipes from Inns and B & B's around the country that can be prepared the night before and cooked the next day.
Naturally many of these are breakfast or brunch oriented and most are baked, like Spiced Pear French Toast, Cinnamon Crunch Coffee Cake, Seafood Brunch Strata, Bacon and Egg Lasagna, Easy Wild Rice Quiche.
A short appetizer chapter includes cheese balls and dips as well as chicken wings and Mushroom Rolls and for dinner there's Sweet Potato Casserole, Salmon Mexicana, or Baked Barbecued Beef Brisket.

This book is another installment in Seller Publishing's Good Food at Home cookbook series has busy cooks in mind with recipes that are formulated for making ahead of time for easier meal preparation and flexibility with an ever-changing schedule. Each recipe has an icon indicating whether all or part of it can be done the morning of the day it is to be used, one or even several days before, or prepared and put in the freezer for a month or two later.
I especially like the idea of making meals for the freezer that can be used later so I'm always looking for new recipes to use in this way. I made the Pizza Potpie which uses the prepared pizza crust that comes in a cylinder in the grocery store dairy case and it was well-received by my family. This particular dish can be made up to a week ahead of time and stored in the refrigerator, or can be frozen for later.
While there are no photos in the book and it doesn't lay open very well, the recipes themselves seem to be tasty, nutritious, and easy to make. For the most part the recipes use ingredients easily found in local grocery stores and even those few that require something unique shouldn't be a problem if one has access to a larger grocery store that has ethnic food sections (Asian, Mexican, etc.). The recipes include everything from drinks and appetizers to main courses, salads, and desserts.
Other recipes I've tagged to try in the near future include Greek Meatballs With Mediterranean Sauced Penne, Tomato-Basil Tortellini, and Chicken Tortilla Soup.
