I bought this book over a year ago when my husband & I started eating healthier. We avoid dairy now & most of the recipes that call for milk specify that soy milk can be substituted. (Recipes that call for cheese I automatically sub soy or rice cheese.)
All of the recipes are extremely simple. The ingredients lists are usually very short & the entire book is very practical. If you're learning to cook (or if the idea of heading into a kitchen scares you) this is the book for you.
Here are the sections with some examples of recipes:
Breakfast (french toast, vegan pancakes, scrambled tofu, rice pudding)
Dips & Spreads (salsa-excellent! hummus, guacamole, tahini)
Soups & Stews (miso-happy soup, minestrone, split pea, kale & potato, Moroccan stew)
Salads & Dressings (fruit salad, apple raisin couscous, marinated vegetables, avocado & pear salad)
Sandwiches, wraps & pizza (falafel, crostini with a bean & a green, black bean & yam quesadilla, tacos monterey, pita pizza crust, farmhouse vegetable pizza)
Bean meals (chipotle black bean chili, dal, marinated tempeh)
Grain meals (spontaneous couscous, polenta with black beans, Indian rice, Sicilian rice)
Pasta (with zucchini & basil, with green beans & feta, primavera, spaghetti pancake, peanut pasta)
Vegetables, Stir frys & potatoes (artichoke feast, gingered Chinese green stir fry, Pad Thai, colcannon, scalloped potatoes vegan style)
Desserts & quick breads (dark chocolate pudding, baked apples, baked bananas, banana bread)

I have come across a real treasure of a cookbook this time. This is a vegetarian cookbook that not only vegetarians will love but omnivores will love it too. It is one of the few vegetarian books that doesn't try to convince the reader that vegetarianism is the only way to eat and live your life. This cookbook shows one how make-ahead cooking makes sense and how you can cook once a week for a week or month of meals. You can then stock your freezer and take out each day's meal and heat it up for quick, easy, stress-free weeknight meals. Heather has shared guidelines for multiplying recipes. Another chapter is devoted to setting up the kitchen, tracking the inventory, stocking your refrigerator, freezer and cabinets and bulk foods. She has a very interesting chapter on mixes. She starts with the advantages of them to the magic of mixes - which includes the efficiency to the timeliness of them. She gives tips for preparing mixes and guidelines for converting recipes. Other chapters include slow cookers. The fix-it-fast chapter includes a brief discussion of pressure cooking as one of the time-saving techniques. I think every chapter has many charts, tips, real life situations, conversion guides etc. The chapter I really enjoy is the slow cooker chapter. There are 15 tips, 11 hints for adapting a recipe to the slow cooker, a cooking time conversion chart and a slow cooker start times chart. (The last 2 charts are so incredibly helpful for me that they are book marked for quick lookup.) Other chapters are Eight Traits of Great Cooks, Sharing Delicious Dividends (hospitality), and Gifts From the Kitchen. All these chapters before you get to any recipes!!
The book is easy reading -- I got into bed and curled up under covers and enjoyed it as much or more then any book I have read. The recipes use easy to find ingredients, They are laid out in such a way that they are very easily read and followed. Each recipe has a Prep Time, Bake Time, and Yield in the area next to the list of ingredients. After the directions are completed there is the Nutritional Facts which includes Daily Values and Diabetic Exchanges. Following that are Serving Ideas and Variations. Quite a few of the recipes are made even faster by taking advantage of the previously prepared mixes that have been stored.
She has included a very conclusive Bibliography, an excellent Glossary, a Resources section, and an extremely handy U.S./ Metric Equivalence Information area with quite a few charts and finally the Index.
This book contains so much useful information, real life situations and charts that I have not seen in any other book. What a great help to people. There are so many unique items that make this book a one of a kind.
We prepared 2 of the recipes ... Breakfast Barley and Split Pea Soup. They were both very, very good!! Quick and easy, nutritional information for each recipe, and the layout of the pages is clear. There is so much about the book I enjoyed that I can't list everything here. If you buy the book I don't think that you will be disappointed.

I have cooked just about every recipe in this book at least twice and it was all very easy and absolutely delicious. My friends ask for several of the dishes over and over, including the Lentil Soup with Spicy Greens (the best lentil soup I have ever had), and the Penne with Broccoli, Red Pepper and Garlic.
This book alone has given me the reputation of being an excellent cook, but I'll never tell it was the book and not me! I highly recommend this one to anyone who wants to eat very, very well and boost their reputation as a cook. I would buy copies for everyone I know except I don't want to share my culinary secrets....Thank you Maria Robbins.

The Vegetarian Low Carb Diet by Rose Elliot is excellent. To follow these recipies will bring kitchen creativity into your life and will begin immediate weight loss. Since beginning I am loosing 2 kilos per week which to me is just great as I NEVER feel hungry.Also I am diabetic, before starting the Vegetarian Low Carb my sugar count (Australian) was around a horrific 18 to 23. After a few days on the diet it dropped to between 8 and 10.
My advice to all diabetics ...Chuck out the carbs. Now! I am recommending it to everyone!

don't let the the dearth of pictures deter you--this is a wonderful cookbook, even if you are not totally vegan. Especially good are the Tempeh-Sweetcorn Roast, Aduki Bean Casserole, and Tomato-Olive Spaghetti Sauce. I use this book almost every day. I hardly ever use any other cookbooks and was about to give up on them entirely until I found this one. Most of the recipes have been great and even the "worst" ones were okay. I haven't even tried everything yet because I love what I have eaten so far so much I get a craving for those recipes and make them instead.
The ingredients are almost all inexpensive and easy to find, plus there aren't a whole lot of perishables to purchase and waste. The ingredients include many of the foods that are anticarcinogenic, immune-system building, etc.
This book makes me enjoy being vegan. I feel priveledged to be eating this way and feel sorry for people that think that food has to be a dead animal and unhealthy to taste great.
I actually cook from this book almost every day (as long as I have some groceries in the house)after working a long day!

I know ... you like meat. Me too. I grew up thinking beef is what's for dinner... and lunch and breakfast. Not that there's anything wrong with that. Or at least there wasn't. Now, I can't help but know better. Sure, there's the health reason in a physical (weight) sense. But I know now there are also environmental impacts, serious issues with how the meat is processed (from sanitary conditions to inhumane kills to worker abuses). But change is hard and meat is yummy, and going meatless means giving up something I love and that raised the right way can still be good for you. So I just refuse to do that. I don't hate vegetables; I just love meat. (Even Whoville would revolt if The Grinch carved roast beets instead of roast beast.) And those vegetarian books? They just DO NOT understand this. They are meatless on a mission -- perhaps delicious but not relatable to a guy who believes bacon just may be nature's candy. Kim O'Donnel asks us meat eaters to try something different: A break from meat once a week. And she has created an AMAZING set of tasty recipes that are good for our bodies and the planet too. I saw an early version of this book and now have the actual copy and to date and I can give the ultimate rave to the Falafel "Burgers," Slurpy Asian Noodle, and Pepita Crusted Tofu Cutlets: My family (all meat eaters) had them for dinner and we not only loved them and wanted them again -- we did NOT sneak a ham sandwich later because we were unfulfilled. Thanks Kim O'Donnel! THIS is change we meat eaters can believe in.

This is one of the best vegetarian cookbook ever. Most of the recipes are simple and fast to make, and all of them delicious.
It classified every meal into vegan, lacto-ovo, lacto, and ovo; and each recipe has the nutrionational guide too.
In the last edition they added the Smart Carbs chapter, for vegeterians that are also interested in wiselly choosing their carbohydrates.
I totally recommend this book for everyone that want to eat in a healthier way.

What a find! For anyone looking for easy, tasty, low fat vegetarian recipes, this book is a "must have." Banana Dream Pie, Tofu Cheesecake, moist cornbread, zesty mushroom soup...all fabulous recipes that can be made in minutes. The majority of the ingredients used are available in regular grocery stores, which is helpful. I have 83 vegetarian cookbooks and this is one of my absolute favorites - because of its simplicity, consistently good recipes and because the recipes are fat free. By the way, it's vegan (no dairy, eggs, or any other animal products).

This is my favorite vegetarian cookbook. The recipes are incredibly easy, and they are hearty and satisfying enough for a very cold climate. Plus, you can make them in great big quantities if you like, sometimes all in one pot, so that you can spend less time cooking and more time... EATING! And the recipies are definitely worth relishing. This book has the best nut loaf recipe ever. The one drawback is that it's in the 1970s tradition of vegetarian cooking,which includes alot of dairy and eggs. Some of the recipes are vegan, and those are very tasty and hearty and warming, but in general this is probably not the best book for vegans. I'm noticing that I'm seeing it less & less in bookstores, and I hope they don't quit printing it, because it's great!

I LOVE this cookbook--it's the only one I have which is truly easy and brainless. (i.e, "throw these six things into the pot, and cook at med. heat for 20 min.") I became veg as a pre-teen, with a mother who hated to cook, so I never learned how to cook ANYTHING! Now, trying to go vegan, I need to know how to make healthy food for my husband, toddler and baby too! This book is awesome for people like me who don't know how to cook and don't have a lot of time to learn. If, however, you know how to cook/like to cook, you'd probably be better off with something more fancy. This IS, however, a GREAT starting-out, "idea book".

I was drawn to this book by its cover, so sometimes it is possible to tell a book by its cover. Seppo Ed Farrey is the head chef for the Dai Basatsu Zendo in Livingston Manor, NY, a catskills retreat 20 miles from the smallest town. It is a Rinzai Zen monastery led by Eido T Shimano Roshi. As the abbott, he teaches that cooking can be a practice of spirituality, since it involves beauty, economy of movement, lack of waste, and punctuality. The co-author cooks for nearly two dozen monks and laypeoplen, and up to 70 visitors. Meals are punctual, 7:15 AM and 1 PM. Meals are served and eaten in silence. Each diner gets three bowls and a set of chopsticks (Did you ever try to eat oatmeal with chopsticks?) The large bowl contains the main dish, the middle bowl contains a stew or curry, and the small bowl will contain a vegetable or salad (not a lettuce and tomato salad though). This book is filled with inspiring, simple, nutritious recipes, as well as a few pages dedicated to Zen terms and ingredient descriptions, and a page of 3 mail order sources for a few ingredients (this should have been expanded!) The book is also filled with sidebars and explanations on Zen practice: such as the Zen way to crack a hard boiled egg, sitting sesshin, jikijitsu, 10 precepts of buddhism, kinhin (walking meditation), dokusan (the interview with the roshi), doing zazen, and meal chants. The recipes include 10 breakfast dishes, like cream of quinoa, oatmeal pancakes, and 5 grain porridge. There are 10 rice dishes like spinach rice with tamari and mirin, shitaki rice, and a spicy rice bake with collard greens, black eyed peas and sweet potato. There are 8 noodle dishes like szechuan green beans and soba, or a classic marinara sauce that uses applesauce, onions, and fennel. There are 14 grain/bean/tofu stew and curry dishes for the second bowl, including a quinoa veggie stew, sweet potato burritos, a sunflower based stuffing, and a mushroom quinoa nut loaf. The 13 veggie dishes include asparagus with lime and tamari; kale with tofu; a non dairy mashed potato that uses pureed tofu, beets with hijiki, and tahini butternut squash. The 17 salads and dressings include beet raiti, a faux chicken salad that uses tempeh and lemon juice; and a red grape salad dressing. Of the eleven soups only four are miso (thankfully). As for desserts, as mentioned above, there are muffins, baked goods, spreads, pates, pestos, and sauces including cheesecake and rice pudding (yes, Zen meditators can let loose with pudding and cake).

As an adult I have been delivered from the Midwestern home of my childhood (meat and potatoes, cream of mushroom soup casseroles, ice cream every night before bed) to the beautiful land of Oregon where outdoor markets and co-op shopping are plentiful. Over the past ten years I have been exploring vegetarian options and a healthier lifestyle but it can be difficult to get beyond some of the complex recipes, expensive ingredients or bizarre taste combinations that seem to frequent vegetarian cookbooks and co-op shelves.
This wonderful book is geared to suit children, who can be notoriously picky eaters, but it also works well on an adult level. It is a great introduction to quick, simple vegetarian meals that introduce a few basic items without overwhelming the taste buds or the wallet. For both adults and children it is possible to move into a healthier lifestyle gradually, one recipe at a time, one meal per week...when we can sit down as a family and each find something new that we like on our plates then I think we become much more open to making healthy choices habitual.
The book also includes some great recipes for slumber parties, Halloween parties and many ideas for re-vamping typical kid foods (hot dogs, macaroni and cheese, brownies) into healthier options....

Is this a "new classic" and what's in this book for the average cook who wants to cook vegetarian food? This heavy tome is packed with useful recipes and is all over the map, both ethnically and in types of recipes. As other Moosewood cookbooks, this is a vegetarian cookbook, but with asides into fish, which I don't mind--being one who limits meat but has not problem eating it. Some people do view fish as living creatures, which, of course, they certainly are.
What's also new here compared to the dairy-laden earlier books is a venture into a few vegan recipes that leave out all milk, egg and other animal-source product, including a recipe for very useful mock sour cream. So there's a little something for everyone, vegetarian, limited vegetarian and even vegan. The recipes tend to the family-style rather than super-gourmet.
One of the most useful recipes for me is a vegetable broth. This is a very good recipe base all kinds of soups. I despise the taste of canned broths and it's a nuisance to make chicken stock from scratch. Vegetable stock freezes well and this recipe makes a particularly flavorful version, using carrots, onions, celery, potatoes and garlic. The potatoes, in particular add consistency to the broth. The recipe offers either sweet potato or carrot for that sweet-spicy element and the sweet potato version also adds body to the broth. There is a version for mock-chicken broth, and an Asian ginger flavored broth base as well.
Italian dishes dominate the recipes, lots of pasta sauces, including a vegetarian kind of Bolognese (meat gravy), a good basic tomato sauce, frittatas, risottos and cioppino fish stew. There are also plenty of diversions into novelties such as an interesting peach salsa.
The breads lean more to biscuits and cornbread than to yeast breads and the dessert section is loaded with cookies. There are also sections on sandwiches, wraps and mock burgers.
In summary, this is a very good vegetarian-based home cooking book, maybe something like Joy of Cooking - Veggie-Style. In that respect, this is a new classic, and certainly found a welcome home on my cooking bookshelf.

This is one of the best cookbooks I own (and I own a lot of them). Chesman starts out the book by going through everything you really need to know about legumes, rice and grains -- the different types, how each should be bought, stored and used, what each is good for, what each tastes and feels like in the mouth, etc. Her shopping and storing tips are worth the price of the book alone, but the recipes take it into the realm of the sublime. The book is well organized by broad chapter, e.g., beans, or rice & beans, with a clear listing of the recipes in each chapter and then the recipes themselves. Each recipe opens with a brief description of the dish or a positive feature about it and is then followed by a very clear list of ingredients and cooking instructions that are almost impossible to mess up. Chesman also gives nutritional content info including the overall protein, fat, sodium, and fiber of each dish, as well as the percentage of calories from fat. Most of the dishes are, or can very easily be, vegetarian, but she gives instructions on how to add meat and make certain dishes more traditional, such as adding salt pork to boston baked beans. She also gives alternatives such as turkey bacon for some dishes, so that the recipes can be adapted for vegans, non-vegan vegetarians, non red-meat eaters, etc. So far I have made Mediterranean White Bean Soup with Fennel, Pasta with Broccoli Rabe and Chickpeas, and Brown Rice and Lentils. All have been unbelievably great and really easy. The dishes freeze well so busy people can make a lot and freeze them in single-serving bowls, or have a party and feed a lot of friends or family without a lot of work.
This book has a lot of great ways to add vegetables and protein to one's diet and get a lot of flavor without a lot of fat. All cookbooks should be this great. I can't recommend it highly enough.

Vegan Soups and Hearty Stews for All Seasons is the fourth edition of Nava's book previously titled Vegetarian Soups for All Seasons. It is essentially the same book as the third edition, but with the color photos added along with the new cover. It is substantially different from the first two editions.
I am a total soup nut so I was very excited to try this one. I hadn't seen any of the previous editions but I'm a big fan of Nava's other cookbooks. This certainly lived up to my expectations. Like all of Nava's cookbooks, the recipes in this book were easy to make, used simple ingredients that I typically have in my pantry, and, most importantly, my family loved them.
The recipes are arranged by seasons, which is a really nice feature since we try to eat local, seasonal foods. It being January when I got the book, I turned straight to the winter soups and found several just perfect for a rainy winter suppers. The first soup I tried was the Three Bean Soup with Brown Rice. Well, actually it was only two bean soup (kidney and cannellini) because I didn't have any frozen green beans. I did have kale though so we still got the green in there. My daughters had bowl after bowl of this hearty tomato-based soup and I ended up with no leftovers for lunch the next day.
The second soup we tried was the Hearty Winter Roots Soup. This was a wonderful mash of potatoes, carrots, rutabagas, and parsnips in a creamy, cheesy soup. Another hit with the family. The third dish we tried was the Vegetarian Goulash--a great "meat" (seitan) and potatoes stew that reminded me of the Sunday dinners my mom made when I was growing up--except without the meat of course.
I can't wait to cook my way through the rest of the seasons. This spring, I'm looking forward to Asparagus and Spinach Soup, Leek and Mushroom Bisque, and Puree of Spring Greens. In the heat of the summer, I can try one of the many cold soups offered like Cream of Lettuce Soup, Classic Gazpacho, or Minted Peach Soup. Next fall (if I can wait that long), I'm dying to try the Baked Onion Soup, New England Clam-less Chowder, and Pumpkin-Apple Soup. In addition to soups, there's a lovely selection of breads, muffins, biscuits and scones. My daughters and I had a blast making Chapatis.
If you love soup or are looking for each meals for your family, this is definitely a good cookbook for you.
