Before i had this book, i didn't know whether to trust brands like,weight watchers, for my Diabetec diet.I was confused on what to eat, and what not to eat.I consulted a dietition, but i still had questions stuck in my mind as soon as i got home from his place.Since i got this book(A miracle!), it helped me,clear my doubts,and relax about eating,not worrying whether this is right to eat or not.It even includes recipes,and alternate tips for sugar, i think,this is a book,i guess....from heaven,Order it NOW!

I LOVE this cookbook--it's the only one I have which is truly easy and brainless. (i.e, "throw these six things into the pot, and cook at med. heat for 20 min.") I became veg as a pre-teen, with a mother who hated to cook, so I never learned how to cook ANYTHING! Now, trying to go vegan, I need to know how to make healthy food for my husband, toddler and baby too! This book is awesome for people like me who don't know how to cook and don't have a lot of time to learn. If, however, you know how to cook/like to cook, you'd probably be better off with something more fancy. This IS, however, a GREAT starting-out, "idea book".

This cookbook is great fun for couples who enjoy working together to produce something: delicious food, in this case. I wouldn't recommend it under the following circumstances:
For couples who are currently going through a bad patch, this cookbook will probably just make things worse: it requires a lot of cooperation and a sense of humor.
For couples who are competitive with each other, you might not like the results when you get out of sync with each other on the instructions because one of you was trying to do his/her part better or faster or with more seasoning. (Not that I'm speaking from experience!)
For couples without access to a well-equipped kitchen, you will be frustrated by the equipment and ingredients that you don't have. This book doesn't require anything really exotic, but it sure is a lot easier if you have lots of different types of pots and pans, a food processor, stove, oven, microwave, and plenty of timers.
Aside from those caveats, you really can't go wrong. The instructions are spelled out in detail, so that even couples without a lot of cooking experience can create complex, exciting meals together without running into the timing pitfalls that usually plague beginning cooks.
Enjoy -- and better clean up the dishes as you go along, because you'll probably be in too romantic a mood to wash dishes by the time you're done cooking, eating, and drinking wine!

Perhaps Rachael Ray is becoming a bit overexposed as she now has many cookbooks flooding the market, a televison show and a magazine. While I applaud her moxy and industrious nature, I am beginning to think that she is spread too thin. This latest offering, "2,4,6,8 - Great Meals For Couples or Crowds" is not up to par with some of her earlier offerings. The idea is great - menus sized for the number of guests that you are planning on cooking for - and all of this is supposed to be accomplished in 30 minutes as well.
For starters, the recipe lists are long - so that tells me right away that only an accomplished cook will be able to achieve these menus in under 30 minutes. A newbie in the kitchen will struggle to put these dinners on the table in under an hour. Some of the ingredients are a bit exotic - personally, I like that as I cook like that all the time. But again, for a newbie or perhaps a mom with fussy eaters, this could be a problem. The other issue is the portion sizes. I made the "Crab Cakes With A Creamy Grainy Mustard Sauce" with the "Wilted Spinach With Tomatoes" (page 69 listed as Appetizer-as-entrée). This was supposed to be a menu for two - but the crab cakes amounted to a half pound per person. This was WAY too much for myself and my husband! (I ended up taking half of this mixture and transforming it into a crab bisque the next day - it was wonderful!) If I ate like the portions suggested, I would be as big as a house! 1/2 pound meat portions seem to be the standard here. That was very disappointing to me, but I shouldn't be surprised, Ray always states that she is not skimpy on portions.
The menus are clever enough and most will be satisfied with the offerings here. There is plenty of variety: Indian food, Italian, Tex-Mex, Moroccan and more. You will certainly get ideas for your family or guests. I think the book is good overall, but not my favorite. I think her "Express Lane Meals" and "Classic Rachael Ray" are far better offerings.

This cookbook is the antidote for the question often posed by well-meaning non-vegans: "don't you find a vegan diet limiting, with only vegetables and tofu?"
I've cooked several of the dishes, all of which have been hits with vegan and non-vegan eaters - satisfying even to my meat-eating friends who believe only meat makes a meal! I served the squash gnocchi recently at a dinner party, and my guests were bowled over by it (it was worth every minute of effort). A cold cauliflower salad with a dressing involving capers was outstanding.
What I most enjoy about the book is its quintessentially mediterranean nature: simple, fresh, uncomplicated, and absolutely delicious. Having grown up in an Italian family, I've hungered for vegan recipes with mediterranean roots that are not the usual pasta and sauce fare. This book has this and more.
While I enjoy cooking with and eating soy products, this book takes a creative approach that doesn't rely on this as many vegan cookbooks do. It also has recipes appealing to every level, from the person wanting only a few ingredients and easy prep to the experienced cook willing to invest a good amount of time. Buy this book - you won't regret it!

I guess you could say I have a small and crappy kitchen by the standards of most cooking shows. This you could say for pretty much all Americans. I found this book to be very helpful! The recipes are not overly complicated and the author gives you tons of tips on how to save time and space. But here is the best part: the meals you learn to make are actually extremely GOOD! You can tell this lady is a talented chef. The book shows you how to make very complex dishes in a simple manner. If you've been wanting to get into cooking but don't seem to have the time or the space this book is for you. It's already helped me a ton.

I am the most unlikely person to rave about a cookbook, because I have owned many over my lifetime. The vast majority of which contain a few recipe "gems" amongst many unworthy of a second try. However, this is the first cookbook I truly love. I have made over a dozen recipes (only a couple of which I have actually given away) and all have been outstanding. The recipes are both interesting and easy to prepare using ingredients I usually stock in my kitchen. In addition, dishes store well for leftovers. My family's favorites so far are the chocolate sheet cake, olive oil & cornmeal cake, earl grey tea shortbread, chicken cacciatore, and potato gnocchi minestrone. When I do find occasion to give a dish to a friend, I look forward to having this book as a reference. I appreciate the suggestions for gift-giving: deliver one batch of baked biscuits along with one frozen batch & baking directions, or send pre-made yogurt cups along with granola and fresh berries. Come to think of it, this cookbook itself makes a great gift...

As a lover of all things pizza, this book does not disappoint. The authors cover it all: the fundamentals of all the ingredients and techniques, as well as chapters on Neapolitan, NY, Chicago, California, Pizza on the Grill, Pizza for kids, and even dessert pizza. The best thing about this book is that it lifts the shroud of secrecy from the closely guarded secrets and passes along techniques used by professionals to make truly great pizza. I thought I was doing well when I was buying TJ's pizza dough and putting my own toppings on at home. This book got me to try making my own dough and now I will never go back. The techniques and recipes in this book have taken my pizza making skills up by several levels. I was blown away at how easy it is, how much better it tastes, and how much fun it is!

I am totally impressed with this cookbook. I have adapted recipes and cooked for my celiac husband for over 10 years and I thought I knew a lot about good gluten free baking. However, this book has given me a ton of good ideas (and recipes that work) and has rekindled my interest in baking. I particularly liked the lemon yogurt scones, shortcake, and white cake recipes.
I tried the breadmaker recipe for white bread and for the first time produced bread that looked good,was sliceable, tasted great (according to my husband) and was so easy to make. Not to mention much cheaper than buying it at a specialty bakery! Another plus is that the recipes are good enough for me (a non-celiac) too! The wealth of information about alternative flours has given me the means to adapt a lot of my own recipes successfully.
