I was pleasantly surprised that the book goes far beyond gluten-free cooking tips and recipes. I have read Korn's other 3 books, and all have been tremendously helpful, and even inspiring. The gluten-free diet can be a shocker (give up your beer, your bread, your tasty baked treats, etc.), but the author somehow makes it easy to understand the nuances of this tricky diet. You feel like you are getting one-on-one expert advice in an easygoing, relaxed style. It's weird, but you feel like you know the author after reading the book. The book is even funny.
For anyone starting out on a gluten-free diet, any of Korn's books are winners. If you also like to cook, this is a double dose of education. You will probably refer to it often. Highly recommended on all counts.

I can't believe no one has written a review for this excellent cookbook yet. I just finished making the Banana-Pineapple Muffin recipe this morning and couldn't wait to taste them hot out of the oven. I have made several recipes from the authors' previous cookbook ("125 Best Gluten-Free Recipes"), so I know how good the recipes can be. But I was still surprised at how "normal" the muffins looked and tasted. The texture looks like they could have been made with regular flour instead brown rice flour, sorghum, and flaxmeal! I've been baking gluten-free breads and muffins for a year since being diagnosed with Celiac Disease and I have had the most success when using the Washburn & Butt cookbooks. I especially like their bread machine recipes--always tastey. My favorite so far is "Henk's Flax Bread" which tasted like whole wheat bread. I can't recommend this book enough for beginners. And besides the bread recipes, there are loads of recipes for all kinds of meals you can make for the entire family.

Being new to the gluten-free diet I have been very disappointed in the majority of the GF cookbooks. The ingredients are often a challenge to find, are expensive, and frankly just taste gross or have a funky texture. The more ingredients that are different from what we "used to eat" the more disappointing the outcome. Of all the cookbooks I've tried so far (8 of the "mainstream" ones) this one has the most familiar ingredients and "normal" foods. My 5 year old has enjoyed everything I have made from this book so far and has been excited to eat something GF that actually tastes like what he used to eat. The recipes are simple, fast, affordable, and best of all we actually enjoy food again! THANK YOU CONNIE SARROS!

In people with celiac disease, gluten (the protein found in wheat, barley, and rye) triggers an autoimmune reaction that causes repeated damage to the villi in the small intestines, resulting in malabsorption of nutrients and painful gastrointestinal side effects. As someone with multiple autoimmune disorders (rheumatoid arthritis, Hashimoto's disease and suspected celiac disease), I have followed a vegetarian (and occasionally vegan) diet for the past four years in an attempt to try and improve my health. As soon as I heard that Donna Klein was writing a vegetarian gluten-free cookbook, I rushed out to buy a copy.
I am the happy owner of three of Donna Klein's other veg cookbooks, The PDQ (Pretty Darn Quick) Vegetarian Cookbook: 240 Healthy and Easy No-Prep Recipes for Busy Cooks, The Mediterranean Vegan Kitchen and Vegan Italiano: Meat-free, Egg-free, Dairy-free Dishes from Sun-Drenched Italy, and have long relied on Ms. Klein's simple and authentically delicious vegetarian cuisine that's (mostly) free of soy (I'm allergic to soy as well). She also includes detailed nutritional info, cultural background, tasty variations, and sample menus.
The Gluten-Free Vegetarian Kitchen begins with a thorough introduction on gluten, where it is found, and what products to avoid, including "hidden" sources of gluten such as dressings, baking powder, spices, low-fat dairy, flavored coffees, and more. If you've recently been diagnosed, this is a very handy guide to lesser-known gluten traps. Thankfully, my town has several excellent supermarkets such as Whole Foods and Central Market that clearly label their gluten-free products and contain a large variety of gluten-free baking products, mixes, and flours. More and more restaurants also provide special gluten-free menus, as one recent estimate places celiac disease at 1 in 133 Americans.
Another wonderful feature of The Gluten-Free Vegetarian Kitchen is that it clearly labels recipes as Lacto-Ovo, Egg-Free, Dairy-Free, and Vegan. As many with celiac disease are also lactose intolerant, this made planning around wheat-free AND dairy-free a breeze. Klein also offers practical vegan substitutions whenever practical, in most cases by omitting the cheese or sour cream called for in the original recipe.
One of the biggest challenges in gluten-free cuisine is the absence of wheat products in baking. Instead of wheat flours (including bread flour, cake flour, whole wheat, semolina, barley, and spelt), expensive gluten-free alternatives (tapioca, quinoa, soy, potato, chickpea, cornmeal, buckwheat, sorghum, rice flours, nut flours and stabilizer gums such as xanthan) are used. Klein does include a chapter on baked goods including quick breads, muffins, and biscuits, but due to my personal tastes, I've steered away from GF breads altogether as they are more labor-intensive, more expensive, and more calorically dense than their wheat counterparts.
Similar to her other vegan cookbooks, The Gluten-Free Vegetarian Kitchen is a breeze to follow; if you can read, you can cook. Ms. Klein's instructions are logical and walk you through each step of the recipe. The included nutritional analysis is much appreciated as I watch my fat and sodium intake very carefully.
And the recipes themselves? Divided into the standard appetizers, soups, salads, entrees, and desserts, Ms. Klein rounds out her selections with breads, pizzas, tacos and sandwiches, side dishes, brunch and egg dishes. What really makes The Gluten-Free Vegetarian Kitchen shine is the inclusion of numerous world cuisines including Asian (Thai, Japanese, Indian), Mexican, Caribbean, Mediterranean, and Italian. The touches of international flair elevate gluten-free vegetarian cuisine from ordinary to extraordinary, and are a pleasant departure from Ms. Klein's normally Mediterranean vegan cuisine.
I was instantly torn between several recipes, but ultimately decided on Caribbean-Style Sweet Potatoes and Black Beans over Brown Rice (p. 125), a saucy blend of orange juice, jerk seasoning, cinnamon, cumin, black beans and cubed sweet potatoes, as my first entr'e. Other personal favorites include Kasha Pilaf with Eggplant, Tomatoes, Basil, and Olives (p. 105), Feta and Ricotta Stuffed Bell Peppers (p. 104), Arborio Rice with Tomatoes and Fresh Mozzarella (p. 119), Chili-Brown Rice Casseroles (p. 100), and Mexican Cornmeal Pie (p. 100).
There is something here to appeal to everyone, from Tex-Mex appetizers such as the zesty Mexican Deviled Eggs (p. 15) and Salsa Cheesecake (p. 24) to filling Indian curries. Sweet tooths (teeth?) rejoice: there are numerous satisfying gluten-free desserts including the delightful No-Cook Apple Pie (p. 176), which features a walnut-and-date crust and a fresh combination of raw apples, raisins, and cinnamon and nutmeg, the delightfully exotic (and easy!) Indonesian-Style Warm Bananas in Cinnamon-Coconut Milk (p. 177), Cardamom Sponge Cake with Strawberry Coulis (p. 182), Hawaiian Coconut Cake (p. 188), and Polenta Chocolate-Currant Cake (p. 193) that will have your non-celiac friends oohing and ahhing over the amazing versatility of gluten-free cuisine.
Overall, the Gluten-Free Vegetarian Kitchen is an empowering tool; it showcases the versatility and creativity of gluten-free vegetarian cuisine rather than emphasizing an already restrictive diet. This is a statement of pride and originality - your gluten-eating carnivorous friends will be amazed at these full-flavored, simple international dishes that make the most of beans, legumes, gluten-free grains, and fresh produce. This book has a number of good and SIMPLE recipes for gluten-free and low-carb dishes using almond flour. Well worth adding to the shelf; it simplifies and collects a lot of information about almond flour that is widely scattered.
The one big caution is that the author uncritically uses agave nectar for sweetening in almost all the recipes. She says this is because agave nectar is "lower on the glycemic index", but that's not an advantage, that's merely because agave nectar is largely fructose, the most dangerous of the sugars.

"Agave syrup is made from the heart of the agave plant, which is pressed to release a juice rich in inulin. Inulin is a polymer made of fructose molecules. The inulin is then broken down either by heat or by enzymatic processing. The result is a sweet syrup that is rich in fructose. Agave syrup is marketed as a healthy, alternative sweetener. In fact, it's probably as bad or worse than high-fructose corn syrup (HFCS). They are both a refined and processed plant extract. Both are high in fructose, with agave syrup leading HFCS (estimates of agave syrup range up to 92% fructose by calories). Finally, agave syrup is expensive and inefficient to produce. The high fructose content gives agave syrup a low glycemic index, because fructose does not raise blood glucose. Unfortunately, as some diabetics learned the hard way, using fructose as a substitute for sucrose (cane sugar) has negative long-term effects on insulin sensitivity."

When my husband was first diagnosed with Celiac-DH I bought this book to try to make some of the baked goodies we had been so accustomed to eating. The recipes are easy to follow, contain ingredients available at any health food store and taste as close to the "real thing" as can be possible. The selection of recipes cover every taste and lifestyle. She also gives tips for making up gluten free packages of all the little convenience food items we take for granted in the grocery store. A must for anyone cooking for a Celiac.

If you have celiac and you have ever tried to go vegan, you have probably woken up several days later, laughing hysterically: "There's nothing to eat!"
Not so: mayonnaise, meatloaf, brownies--it's all here.
The author also limits recipes that use corn, soy, and sugar, resulting in food that is low glycemic index, allergy-free, vegan and gluten-free. Perfect, perfect, perfect.
Well, almost: many of the recipes have long ingredient lists, but they won't take forever, and they include recipes that can be cooked a month in advance and then frozen. (Your mother should have taught you not to freeze tomatoes.)
My only real complaint is the book's discussion of oats: the author says that oats don't have gluten, and so they are safe. Actually, oats contain avenin, which is just a different form of gluten; in a test tube, intestinal samples have an immune reaction to avenin; but, in live people, there are many fewer anti-gliadin antibodies (the bad stuff) in diagnosed celiacs who eat oats.
The problem is, some celiacs do fine on oats--and some don't. It's difficult to tell until the person in question starts to get sick again.
However, with that one caveat, this cookbook is way cool, and very, very useful. If you are willing to spend any time in the kitchen at all, this is well worth picking up.

Thank you, thank you!!! I have bought so many gluten free cookbooks and have had terrible results. Gluten Free On a Shoestring is very easy to follow..Nicole explains everything and makes it seem so easy to bake. I baked her Pound Cake and my husband (who does not need to eat gf) said he couldnt tell the difference. Nicole is witty, smart and clever. I had the wonderful opportunity to meet her and she was so informative, while being so down to earth. She understands that people dont want to eat gf foods that taste and smelly yucky. She understands that people want to be able to cook gf without a hassle, not to mention the cost of baking gf. I recommend this book to everyone that needs to be on a gf diet. Don't waste your money on any other gf cookbook. I look forward to her next cookbook and will certainly buy it! Thanks, Gina

I am totally impressed with this cookbook. I have adapted recipes and cooked for my celiac husband for over 10 years and I thought I knew a lot about good gluten free baking. However, this book has given me a ton of good ideas (and recipes that work) and has rekindled my interest in baking. I particularly liked the lemon yogurt scones, shortcake, and white cake recipes.
I tried the breadmaker recipe for white bread and for the first time produced bread that looked good,was sliceable, tasted great (according to my husband) and was so easy to make. Not to mention much cheaper than buying it at a specialty bakery! Another plus is that the recipes are good enough for me (a non-celiac) too! The wealth of information about alternative flours has given me the means to adapt a lot of my own recipes successfully.

I've been gluten free for about 6 years. I have many gluten free cookbooks, but I was hooked on the promise of simplicity for the recipes in this book. I like the idea of quick, healthy meals for my family that also meet my dietary limitations. Tonight, I tried the mac and cheese and meatloaf. Both were delicious, and the family liked them as well! The recipes are fairly simple, and turned out very tasty. My only "complaint" - which I hope really isn't seen as a complaint but more of a fact - is that the 20 minutes part of the title means preparation time; it does not include cook time. But regardless, I look forward to trying more of the recipes.
As many other reviewers have mentioned, the tips are extremely helpful. There are tips for how to buy dried fruit, storing chickpeas in the fridge so homemade hummus will already be chilled, making double batches and freezing, etc. I love the idea of baking a big batch of brown rice or making extra quinoa and freezing for later use. I have a very active family, and this kind of meal planning for the sake of convenience is huge for us.
The only real negative for me is that Ms. Green's flour mix contains bean flour. I have not been able to tolerate the taste of bean flour in most other recipes (or its effects on my tummy if I eat too much). I seem to have a keen sense for the taste, and have only found a few recipes containing bean flour that I like (one is Bette Hagman's zucchini bread with pineapple, the other is Erin McKenna's Apple Cinnamon Toasties, which are both super yummy!)The mac & cheese I made tonight called for the bean flour mix, but I used sweet rice flour instead, and the recipe still turned out great.
If you have a dairy sensitivity, there are quite a few recipes that call for milk, cream, or cheese of some sort. For those with nut allergies, there are also recipes calling for nuts. In both cases, there are often notes at the end suggesting substitutions to make the recipes dairy or nut free, which I think is awesome!
