Let me put it this way. I had to figure out what to eat for the next week and we were already over budget on food, so I couldn't spend much. I flipped through this book and easily found four recipes that were mostly made up of staples I already had. And most of her recipes are so quick to make there is no excuse not to cook. Even the longer recipes she has alternatives to make them shorter. Chapters are set up by food headings such as Rice; Beans; Vegetables; and Pizzas. She also has ways of sneaking in new vegetables such as kohlrabi and bok choy and turnips without anybody being the wiser (except the cook). An amazing cookbook.

I subscribe to Vegetarian Times and really like the recipes. However, just like any kind of cooking, VT's dishes CAN be complex and time-consuming. The fact that they're vegetarian recipes doesn't automatically mean they're easy to prepare.
Here comes this book to show just how simple vegetarian cooking can be.
Many of the recipes are so short and quick to prepare that you'll be stunned. They're also remarkably "simple" in the sense that they're not loaded with a gazillion different ingredients. The whole wheat waffles, for example, have a grand total of six ingredients, which is just fine by me, especially since I get a little antsy whenever I have to go through every cabinet in my house to find all the stuff I need to make most things "from scratch."
One of the challenges cooks face in a household that is "blended" (that is, composed of both vegetarian and non-vegetarian members) is coming up with dishes that appeal to everyone, taste great, and don't break the bank. These fit the bill.
It's not all beans and tofu, either. Wonderful uses for different veggies make it possible to use leftovers and maximize our food dollars.
I particularly like the soups and stews, and I'm glad they include simple drinks like aguas frescas (fresh waters made with fruit).
I think you'll like this one.
The only reason I don't give it five stars is that it is very short on pictures. I really love to see how a dish should look after it's done, and this book has only a few pics to accomplish that goal.
If you are looking for a book that contains great vegetarian recipes for really elaborate meals, please search further. But if you want quick, tasty, relatively-inexpensive dishes, this is a good choice!

This is the best vegetarian cookbook I've ever used. Every dish I have made from this volume has been delicious, easy, and quick. While some of the recipes take a little planning ahead (ie, calling for cooked rice) the majority really do whip up in no time, and the combinations are creative, tasty and generally quite healthy. I find that with most cookbooks, I make a few recipes, and then lose interest because they are hit or miss. I've worked my way through at least half of the recipes in this book and always turn back to it. I would most highly recommend this cookbook for anyone who is low on time, but still wants interesting, delicious meals!

In her new book, More Soy Cooking, Marie Oser gives standard meals a healthy makeover by substituting soy derivatives for meat, poultry, fish, eggs and dairy products. Traditional Chili Con Carne becomes Chili NON Carne, without sacrificing taste, texture, or nutritional value. "Swiss 'Steak' with Sauteed Portobello and Cremini Mushrooms," 'Beef' Ravioli, "'Turkey' Tetrazzini," and "Manicotti 'Bolognese'," are just a few of the mouth-watering, easy-to-make "enlightened" entrees (based on Ms. Oser's weekly syndicated newspaper column, "The Enlightened Kitchen"). Each recipe is followed by a nutritional analysis of both the traditional version, and the "enlightened" version. The Chocolate Chip Bundt Cake with Orange Blossom Glaze weighs in with only 4 grams of fat, compared to 16 grams for its traditional counterpart. Great and easy recipes! After trying a few of the dishes demonstrated on Toni's Delicious TV Totally Vegetarian show (I'm now living on crispy, wonderful tofu bites) I pre-ordered her book. I am not disappointed! The book begins with basic lists of what belongs in a functional kitchen, and, more importantly, why it belongs there. The list is limited--not a dream kitchen--a working kitchen. The recipes are doable, delicious, and quick. Toni's explanations are clear and the sequence is logical. I found a special feature for those moving into a more vegetarian lifestyle! There is an "if you like . . . then try" section in the back. So for instance, if you like beef stock, then try porcini stock. Fabulous! If you're a vegan already this is a great book for you. There are very few recipes with eggs or dairy, and even in these it's usually optional.
What I love though is the food! If you've ever thought that becoming a vegetarian or vegan was a sacrifice, think again! The dishes included in this book are varied and truly delicious (and, yes, low calorie and good for you too). Try the Moroccan Stew: a blend of roasted eggplant, cashews, tomatoes and spices. Or do the Rosemary-Roasted Winter Vegetables: roasted butternut squash, cauliflower (which rocks when it's roasted) and rosemary.

This is the best vegetarian slow cooker cookbook that I've found, though there really aren't many others. I own two vegetarian slow cooker cookbooks and this is the only one I use. In the year that I've owned this book I've made close to 30 of the recipes. The photos in the book are enticing and the recipes are easy to follow and for the most part have been flavorful and popular with my family. I especially like the spicy recipes like Caribbean Pepper Pot Soup and Red Lentil and Carrot Soup with Coconut. There have been a few duds- Cannelloni with Tomato Eggplant Sauce didn't turn out well from my slow cooker. I have come to really embrace the technique of precooking the vegetables as suggested by Finlayson since this lends much better flavor and texture to the finished dishes. I am back today to purchase a copy for my sister, also a vegetarian and soon to be a regular slow cooker.

Using mostly kitchen shelf ingredients, Ms. Lemlin's book has provided our family with wonderful breakfast lunch and dinner recipes. Honestly, there is not one bad recipe in the bunch. I first took this book out of the library, paid lots of late fines and eventually, reluctantly, took the book back. My daughter bought it for me, and now I am buying her and her sister a copy of the book. The techniques are simple, the ingredients easily available and the outcome is consistent every time. I highly recommend this for either vegetarians or those who simply enjoy wonderful interesting food.

I was hoping for creative meals not based on tofu and beans alone. What this book does is give you a shopping list for foods already prepared (store bought biscuits, bottled dressing, shredded carrots from the salad bar- not kidding- canned apricots, prepared pie crust, washed salad greens, cookies, etc.) I do not buy a cookbook expecting "recipes" for "Coffee Floats with Amaretti Cookies" that tell me to buy coffee ice cream, amaretti cookies, and strong coffe or root beer. "When ready for desert, fill each glass with cold coffee or root beer and serve at once with straws. Pass the cookies as an accompaniment." (which cookies I have been instructed to "Arrange ..on a serving plate.")
A gigantic "duh!" for this book and an insult to one's intelligence. Don't waste your money on this one.
