The book "Forks Over Knives" does a wonderful job of performing two disparate tasks:
It provides concise explanations of why a whole-foods, plant-based diet is healthiest for people, the planet, and the animals, and
It offers a wide range of amazing recipes to help people get started.
The editor pairs these tasks to perform one goal: to help people live healthier lives through their food choices.
The book does this in three parts: (i) why a plant-based diet is best for your health, the planet, and the animals (37 pages); (ii) basic facts on plant-based foods (19 pages), and (iii) recipes (133 pages). While the bulk of the book is for recipes, there is a lot of powerful information in the first two parts that has appeal for anyone from the newcomer to the most informed, with topics as diverse as the environmental impact of food choices to nutrition labels. Even after having read literally dozens of books on plant-based foods and having finished Campbell's eCornell course in plant-based nutrition, I became more informed after reading the first two parts. The third part is filled with tempting recipes from some of the top plant-based chefs who refuse to compromise on health to sell meals.
The writing style is, for lack of a better word, "comfortable". You can almost imagine yourself having a casual discussion with 11 experts on healthy eating, with insights that would surprise your general practitioner, but with language suitable for the layperson.
My only qualms with the book are with the image quality of the graphs and people, which are technically disappointing, although still discernable, and with the arrangement of the bios, which seems out of order with their contributions.
As a result of the dual tasks, some of the Amazon reviewers were negative. I've summarized them here, along with some counterpoints:
Claim: The educational part of the book was too concise and contained bios
If you are interested only in Dr. Esselstyn's work, try Prevent and Reverse Heart Disease: The Revolutionary, Scientifically Proven, Nutrition-Based Cure. For more on Campbell's work, turn to The China Study: The Most Comprehensive Study of Nutrition Ever Conducted And the Startling Implications for Diet, Weight Loss, And Long-term Health. For the impact of our food choices on the environment or animals, there are hundreds of books that describe the effects in chilling detail. This book is not the most comprehensive, authoritative guide on any one of those subjects, but it is a very readable and compelling guide on what is arguably the most important topic for most readers: healthy eating. And it holds something for every nutritionist I've ever met, as well as for the overweight Wal-Mart shopper whose cart is filled with chips and soda, or laboratory-manufactured foods from aisle 17. I have yet to find a book that does a better job of balancing the tasks of enlightening readers and facilitating changes in diet.
The book does offer bios on the people who are trying to help us live more healthy lives. At first, I thought that this was a bit too much of a stretch for an already ambitious book...if I read a book on yoga, I'm not necessarily interested in the backgrounds of the leading proponents of yoga. But here I think the bios are justified because they offer a much needed perspective. The bio on T. Colin Campbell, Ph.D., explains how he grew up on a dairy farm and was preparing to continue working with animal-based foods, how he discovered that animal protein was a problem rather than a solution to health woes, and then how certain factions in the food industry tried to smear him to stop him from sharing his findings. Dr. Neal Barnard found that the ribs on his cafeteria tray looked and smelled eerily similar to the ribs he had just examined from a human cadaver, which led him to think differently about food. Dr. Caldwell Esselstyn tells of how he saved cardiovascular patients who had been told to "go home and prepare for death". I know of dozens of people with cardiovascular problems and one person who was also told to give up hope, so this latter bio may serve as a wakeup call where all else has failed. Collectively, these bios show how the leaders in the field came to the same conclusions from different perspectives, in spite of the traditional food and health industry pressures and tactics.
Claim: The book offered nothing that couldn't be found on the Internet.
I've been a student of plant-based nutrition for 10 years and I've read everything I can on the topic, yet I found pieces here I'd never seen before: Bios that contain insights obviously drawn out from first-hand interviews with the subjects; success stories from people who chose to adopt this healthier approach to eating; a very concise and thoughtful summary which compares whole, plant-based foods to animal products (styled like black box warning labels for food), and some great recipes from leading chefs.
Claim: The book contained no bibliography and few footnotes.
This comment, especially when juxtaposed with the above comment, shows the difficulty in pairing disparate tasks: it's impossible to please everyone. If everything could be found on the Internet, why would someone need a bibliography and dozens of footnotes? Actually, there is a bibliography--called a "bookshelf" on page 199, as well as a list of online references on page 198. There are few footnotes, which will disappoint the purist, but this is a guide, not the definitive source on every topic covered.
Now, a comment on some of the "reviews": A review should summarize the content, offer a critical assessment (e.g., Was it noteworthy? Understandable? Persuasive?), and an argument as to why prospective readers might or might not enjoy the book. Some of the comments for this book are simply mean-spirited attacks on a book that aims to inform, persuade and help those who want to live longer, healthier lives in making better food choices--all for the low price of $6.40, or less than one-tenth the cost of a doctor's visit, where the topic of whole, plant-based foods will likely never come up. Such attacks are to be expected when someone challenges long-held, but unjustifiable beliefs with extensive clinical and epidemiological evidence. Still, more thoughtful reviews would benefit Amazon customers.

I've been a vegetarian for the past 8 years, and my New Year's resolution this year was to go "all the way" and eliminate all animal products from my life. This book has been a great help, especially with all the cooking and recipe info. I still have a ways to go, though, especially with "veganizing" all of my household items. Let me first say that I am not the kind of person who believes one eating plan fits all or that the entire population of the world should be eating the same way. People are different and have varying needs so I would never advise anyone else that this book is the only choice and that everyone must or must not follow Bauer's plan. But, speaking for myself and my own progress, I am extremely glad I found this book and I do believe it spared me from a life of obesity, a direction I was headed in quickly. I was a healthy weight throughout high school because of nutritious eating and regular exercise, but after I got into college, the extra pounds piled on. And I don't just mean five or ten or even twenty-- I mean sixty or more. I am five feet tall and thus carrying around that much extra weight had a major impact on how I looked and felt. At my highest, I was at least 180 lbs. I wanted to lose this weight before I moved on to graduate studies, but, with my senior year fast approaching, I didn't know what to do. I saw plenty of ads for fad diets, pills, shakes, etc., and I was scared that following such a plan would be dangerous and leave me worse off than before I started. Fortuitously, I saw Joy Bauer on TV one afternoon promoting this book and the logic sounded simple: eat healthy foods 90 percent of the time and junk foods 10 percent of the time. Marry this notion with portion control and voila. I ordered the book from Amazon and couldn't wait for it to come in the mail. I followed her advice from the first day after I finished reading the book and I also began an exercise regimen of walking at least five days a week. What a difference! I started on the 1600 calorie diet and after about one month, I stepped down to the 1400 calorie diet. Today, I usually oscillate between the two. As of now, I have lost almost sixty pounds and am continuing to lose the rest a little at a time. (Rest assured, though, I did see results within two weeks just as the book promises. After my first two weeks on the 90/10 Plan, I had already trimmed off ten pounds, a feat I thought I might never accomplish.) There have been days when I did not follow the plan religiously, especially on birthdays and special occasions when eating cake or going out for dinner was on the agenda. But I still lost weight and I believe regular exercise carried me through the days when I wasn't eating healthy at all. I also have not eaten only Bauer's menu suggestions. She lists the breakdown of how many calories you should consume at each meal under each plan and I follow that as a guideline. If I feel like a TV dinner, can of soup, homemade meal, etc., instead of one of Bauer's suggestions, I have what I want but follow her caloric limitations. A long story short, I found this to be a plan I could stick with, a plan that helped me tremendously, a plan that I feel healthy and energetic on, and a plan that I would recommend to any friend. If you are serious about a lifestyle change, not a temporary quick fix, and are ready to exercise at least a little bit in addition, I would definitely suggest you pick up a copy of this book.

As a family physician and new mother, I bought this book with interest. Overall, excellent principles of healthy baby diet, and excellent ways of preparing baby food at home. However, I was astounded by several key things. -Yaron recommends feeding a baby nuts - she doesn't give a specific time frame to start, but talks extensively about how to prepare and feed them to "baby." Nuts are HIGHLY allergenic, they are definitely not recommended before the first year and longer after that if a mother can help it. I have heard of a child suffering from anaphylactic shock from eating home made peanut butter at 8 months. -Yaron recommends preparing Spinach and Carrots at home, these two vegetables are not recommended for home preparation because of their high concentration of nitrates. Baby food companies screen these two vegetables so that only those from areas of the country with low nitrates can be served to baby. -Yaron makes comments such as, "the good old days" when you can buy tofu in a refrigerated bin where you can bag your own tofu...well this was ended for a specific reason, IT ISN"T SANITARY.
These glaring statements make this book one that I would not recommend for my patients. If you are aware of all the facts above and will double check some of her principles with other authorative text, then this is a good book on home preparing food in a wholesome, organic manner.

Most recipes can be prepared in less than 10 minutes. The side bar on each page gives families a glance at the nutritional benefits of each recipe including suggested complementing foods.
Our family eats no prepackaged foods and this is a great book based on real food! You will not see recipes that call for a can of condensed soup.

I really wanted to like this book. I wasn't even expecting it to have lots of information that I didn't already know, having done a ton of research myself in my role as fertility counselor, but thought that it would be slightly helpful at least. It was not. It was instead incomplete and incorrect.
Conclusions made are inconsistent - thing A is to be treated with caution because its safety for pregnant women is unproven, whereas thing B is considered safe because it has never been shown to cause problems. Where is the logic here? There is no difference between "never been shown to cause problems" and "safety unproven". And if there is a difference in the proven safety of these two things, it should be stated explicitly rather than left at these two vague comments.
Some statements are just plain incorrect. For example, it is stated that ovulation is the day of the basal body temperature rise, when in fact the temperature rise usually occurs the day following ovulation. Also, intercourse on this day is stated to give the best chance of conception. This is incorrect whichever way you look at it - intercourse on the day of the temperature rise is usually too late (being the day after ovulation, the egg is often dead by then), and intercourse on the day of ovulation is still not the best timing (for those who are interested, intercourse the day before ovulation is best, although difficult to time). I have to wonder what other "facts" in this book are downright wrong.
Finally, conclusions are drawn without sharing the information used to make them. It is claimed that a woman who has no immunity to rubella must get vaccinated, stating that the potential risks of the vaccine far outweigh the benefits. Nowhere is it mentioned that an adult woman receiving the rubella vaccine has much higher risk of serious medical conditions such as rheumatoid arthritis and thrombocytopenia, and that according to the CDC the incidence of rubella in the US is extremely low. Whether or not the benefits of this vaccine outweigh the risks is something for women to decide for themselves, with all pertinent information.
Now, I would expect a book written by two doctors to side more often with medical gospel than not, but I was very surprised by the lack of portrayal of the other side of the issues. Or more to the point, that some things were treated as complete non-issues: women are encouraged to run right out and get the flu and chicken pox shots, with no mention of their risks or efficacy.
I should say that I did find the information on weight, diet, and exercise to be very thorough and mostly consistent with other reading I have done. Still, I simply cannot recommend this book.

I don't "do" diets. This is so easy to follow, with meals that I would eat anyway.I lost 7 pounds in 11 days.I'm still losing!! I tried this on a recommendation from someone who lost over 30 pounds by following the Flat Belly Diet.She travels quite frequently and was able to do it. If you don't want to invest in the large book version...the pocket version has just as much information.

Please be aware of the word "handbook". This "book" was small--about 5x7 size. In searching for a reference to assist me in recording in my food diary, I thought this would do so. The foods are listed in five columns--the "food", the "GI value", the "amount of food in grams containing 50 grams of carbohydrates", then "carbohydrate per 100 grams of food" and then the "GL" column--not "one apple" or "1/3 c of rice", etc. So it was not much help to me. Most text's that I have viewed so far have GI/GL information for a food serving but it is very limited but this booklet's listed servings were indescript and not adaptable to everyday life. The booklet itself was in great condition and it was promptly delivered.

I read this book back in 1992, but in light of all the Atkins-hype, I felt compelled to share my success with the plan in this book and give credit where it is due. What I got out of it is if one performed at least 40 minutes of cardiovascular exercises at least 4 times a week (which includes something as affordable and low impact as brisk walking, which the Dr. highly encourages in his book) and watched their fat intake (which was 20-40 grams of fat per day for women and 30 to 60 grams of fat per day for mean I believe) that one got down to and maintained their ideal, healthy weight. It worked, and wasn't restrictive because I could eat whatever I wanted as long as I stayed in the 20-24 g range. I didn't even try to count calories. I was one of those individuals who struggled with her weight since childhood, teetering around a size 14 as an adult, which isn't enormous, but isn't healthy for someone only 5'3", and I got down to a size 8 in 2-3 months. Also, I was a vegetarian, so I ate MOSTLY carbohydrates. Therefore, I find it confusing how the current trend is anti-carb and potentially high-fat when I achieved such success on a high carb, low-fat diet. This book is worth the read. Hope this has helped some of you out there who are looking for a "doable" weight loss plan. Good luck.

I always enjoy reviewing a cookbook, but when I come across one as outstanding as this one is the joy is doubled.
Author Phyllis Pellman Good, with The American Diabetes Association, has compiled a book filled with recipes for diabetics that you make in a slow cooker. Yes, you read that correct, what a great idea for use in our busy lives.
Let me tell you this is no small work, but is absolutely packed full of page after page of wonderful recipes to plop in your slow cooker, walk away and come back to a delicious meal or desert.
Yes, again you heard me correct, there are page after page of deserts that you can make in your slow cooker and all will be loved, not only by those with diabetes, but the entire family. From main dishes to deserts, this book brings the entire family together with recipes that allow you to easily make an entire meal that can be eaten by every member of the family.

When you are expecting, there is an overwhelming amount of rules: you can do this, you can't do that, eat this/not that... and there is an equally overwhelming number of books to read.
When I was pregnant with my daughter I bought and quickly returned many-a books. There was only 1 pregnancy book that I kept and if this below was released when I was pregnant, this would have been a book that I kept as well.
Jonny Bowden and Allison Tannis have put together a reference for moms-to-be to help you figure out what foods are best to eat during your pregnancy. Broken down into trimester, this book is very well organized and does not require you to read it cover-to-cover. Rather, you can read it on a need-to-know basis.
Not only do the authors fill you in on foods that you probably never thought of eating during your pregnancy that will make a difference in your baby's life, but they tell you why. They don't just say eat this and not that- they give you the medical reasons (in layman's terms) of why you should eat this or that and what good it will do for you and your baby.
The book includes "fast fact" boxes that will give you helpful and sometimes fun information such as:
* Vitamin B6 helps alleviate morning sickness.
* Anemia can show up during your second trimester if you're not getting enough iron.
* Iron supplementts commonly cause constipation. You may find them less of a problem if you take them on a full stomach and dink plenty of fluids.
Another helpful box you will find throughout the book is "Jonny's Tasty Tips." Here, the co-author highlights tasty ways for you to enjoy the foods that he is recommending. Some of these foods include:
* Chives, Leeks & Lamb during the first trimester.
* Figs, Chia Seeds & Watercress during the second trimester.
* Cranberries, Herring & Rhubarb during the third trimester.
The remaining chapters in the book cover pre- and post-natal days from fertility to breast feeding and everything in between. Giving you the knowledge about the best foods that you can eat
* to help with the aches, pains and complaints of pregnancy
* while breastfeeding your newest arrival
* during the post-partum period that may even help alleviate the symptoms of post-partum depression. According to the authors, there area foods that have "depression-fighting power"
* to help with your fertility and start you off with a healthy pregnancy before you even conceive.
A very important chapter, in my opinion, contains information on what the authors call "tricky foods and herbs." We have all heard of certain herbs, foods and/or activities that we should avoid while pregnant- especially during the first 12 weeks of a baby's development. Things like alcohol/caffeine consumption, artificial sweeteners, hot dogs (yum!), herbal supplements and more. The authors tackle these topics and give you the information that you need to make informed decisions regarding your lifestyle while pregnant.
To me, the book reads like an encyclopedia, not too overwhelming, easy to find the information you need and very well organized/broken down into sub-sections. I can open it up, find what I need and move on. Complete with color photos, nutritional information, fact boxes and more- I think this is a perfect addition to any pregnant woman's bookshelf- just to have as a reference. It would probably make a good gift for someone that you know is pregnant.

This kind of information saved my life when I first started reading about it 20+ years ago. I was hospitalized with a life-threatening colon blockage. I was told I would need to be on medication the rest of my life. After reading some of Dr. McDougalls's books, I was blown away how with easily my doom and gloom illness evaporated.
In my humble opinion, Dr. McDougall ought to win the Nobel Prize. He has been way ahead of his time (at least in this country) for many years. His latest book addresses some of our most common illnesses and diseases and how you can easily doctor yourself to good health. The book is an easy read and covers any question you might have from what goes into your mouth all the way through to when it comes out. Though I consider myself well-educated, I learned new things. Especially helpful was the part on how to decide if you need a colonoscopy, something the over-50 crowd is being pushed to consume. I only wish books like these were required reading for educators, all health care professionals and children. In addition to helping you rid yourself of some of the major illnesses of our time, if you follow the good doctor's advice, you'll just plain feel better.
I have no connection to the author, other than I think this is the best advice money can buy. It's bound to save you at least one doctor's office visit, or more. And maybe even some costly, totally unnecessary surgery.

I have had this book about a year, and I have tried about 3/4 of the recipes. Only one reject so far - and some of the recipes are terrific. I like to cook, and the ease of preparation is just about right for me for everyday meals - not so simple that the cookbook is unnecessary, but usually not so involved that I can't make something from the book each evening. I also liked that her recipes were creative - not the usual thing that is in every other lo-cal cookbook. The other plus is that they are not full of weird ingredients that you would never use again outside of that recipe. If you like to cook and could spend about 30-45 minutes making dinner, and want different, tasty lo-cal meals that use on-hand ingredients, this is your book.

I find it amazing that of the reviewers that say they have diabetes- every single one said this program lowered their blood sugars and it works. Yet, people give the program a lukewarm review because it is too hard, or there aren't enough recipes, nor an exact diet given. Do you want a program that will help you cure your diabetes or not? This program gets you perfect blood sugar.
I am also a fan of Dr Richard Berenstein's Diabetes Solution. Berenstein says eat enough meat to feel satisfied. I see a lot of overlap between what these doctors are saying- yet one is a vegan rabbi and the other is an advocate of meat eating. That should tell you something. (Eat tons of vegetables, avoid most fruits and starches. Coffee is bad. You need to exercise to control blood sugar and build muscle. All those fake sugars are very bad. Berenstein says most of them don't work to control blood sugar, and Cousins sees them as toxic. )
But Dr Cousins program also brings in a spiritual dimension. You will be physically healthier if you don't eat meat, but especially you will be doing the ethical thing.
The raw foodists might hate my bringing in Berenstein because they believe that cooking food itself is bad (and Cousins gives a lot of research to that effect.) (And most raw foodists are vegan.) But both of these doctors will tell you that as a diabetic you cannot consume the starches, sweet fruits, sugar-free drinks and candies, coffee, etc that the American Diabetes Association recommends. Both will tell you there is big business profiteering on your diabetes. Both will tell you the standard medical approaches to diabetes care usually do more hard than good.
OK- the program is hard. Follow it only if you want to live a long healthy life.
As for not giving a specific program: he gives you formulas and patterns because then you can create endless menus and variety in your meals. He tells you which foods to eat, and which to avoid. He tells you how to juice-feast, four ways to get more greens, how to make green soups, how to make crackers and pates and wraps. He gives some recipes. There are tons of recipes online once you have these guidelines.
And- if your friends think this diet is too "extreme" then please consider that you deserve more support from the people you love. (My friends and family have given me complete support.)
This book is NOT an ad for his workshops. There are about 450 pages and only 10 describing the workshops. Those ten pages explain something that I think is very true- to live on a raw vegan diet, you need to learn about more than just food. (Honestly, to commit to curing your diabetes through any diet, one would probably need to learn about a lot more than food. It is a spiritual journey.) [...].

The first 27 pages of this book consist of "tips" for losing weight. This includes things such as:
-the Biggest Loser diet in a nutshell
-how to keep a food journal
-how to read labels
-a section where the Biggest Losers from the show share their favorite foods in various categories such as "their top 20 low cal foods", "their top 20 evening snacks", or "their top 20 low cal desserts."
Then comes the part you likely got the book for: the calorie counter. HOWEVER, this is not simply a book that gives you ONLY the amount of calories in a food item, no, The Biggest Loser Calorie Counter: The Quick and Easy Guide to Thousands of Foods from Grocery Stores and Popular Restaurants--As Seen on NBC's Hit Show! also gives you the amount of protein, carbs, fiber, sugar, fat, saturated fat, and sodium (which is really good for those with heart or blood pressure issues) in a food item. Know too that in this particular calorie counter, food items are arranged in alphabetical order by "groups" such as "beverages" "desserts" or "pasta".
The book ends with a "dining out" section, which is where you can find info on foods in your favorite restaurants- well, maybe not ALL your favorite restaurants, but a lot of them. Also need to mention that the book can fit in an average-sized purse so you can take it along when eating out (if you're a guy, you'll just have to tote it around).
