"Favorite Japanese Dishes" is the second "Quick and Easy" cookbook that I have bought, and I remain impressed with the series. There is a good variety of dishes, and very simple instructions for cooking.
This one focuses on five fundamental styles of Japanese cooking, basically what a Japanese family would eat at home on a day-to-day basis. Shabu-shabu are generally meat dishes cooked in a metal hot pot, Sukiyaki is both meat and seafood cooked in either a metal or a ceramic nabe pot. Tempura is battered and fried...well anything, really. Teppan-yaki is thin slices of meat and vegetables cooked on a metal hot plate. Teriyaki is a slow style of cooking fish and meats that produces a distinctive taste.
Shabu-shabu, Sukiyaki and Teppan-yaki are all very social means of cooking, where everyone sits around a bubbling pot or hot plate and cooks their own meal at a table. They are really great ways to have a dinner party, even better in the winter when you can huddle around a hot dish.
Each style has a good sample of different ingredients using the same method. There is typically a beef dish, a pork dish, a chicken dish and a seafood dish. While I haven't tried everything, the Seafood sukiyaki is amazing, as is the salmon teriyaki.
"Favorite Japanese Dishes" is probably not a very good cookbook for vegetarians, as almost all of the dishes have meat or seafood of some sort. The exception is tempura, which can be cooked with pretty much anything.

Karin Knight's remarkable book is not just for babies. Her sound nutritional advice and delicious recipes are for everyone of any age. One of the most important things she's done is to distinguish between true food allergies (relatively rare) and food intolerances, something that many parents need advice on. The 5 sections of "1,2,3, Cook for Me," provide parents with essential knowledge about a child's nutritional needs from birth to 24 months and beyond, which foods are okay and which to avoid depending on the child's age, the benefits of making homemade food for your baby, a month-by-month feeding guide, and a toddler's month-by-month guide with recipes the whole family can enjoy. I wish we had this book when our own two sons were born. Now, our grandchildren are benefiting from Mrs. Knight's wisdom.

I have several books on dehydrating your own trail meals and this is easily the best. It is concise and full of good ideas and recipes. The guidance is flexible enough for the lightweight backpacker or for the canoe or pack mule traveler. For example, some of the recipes call for a dutch oven (too bulky and heavy for the lightweight backpacker) and others are suitable for a one pot meal (ideal for the lightweight backpacker).
A nice feature is the chart of drying temperatures and times for different foods. Also, the chart of calorie and protein content of different foods is important to making sure you get enough calories to keep going in the field and enough protein to keep your body from consuming your muscle tissue for fuel. There are also plans for building your own dehydrator for the do-it-yourselfer. The suggested one week meal plan is a good guide to get you started on packing for a trip.
The emphasis of this book is on drying individual ingredients and then rehydrating and combining them at meal time. This allows you to be more flexible in your meals, but takes a little longer at meal time. However, it also tells you how to use your own recipes to prepare a conmplete meal and then dehydrate it. Precooked spaghetti, rice or beans rehydrate and cook faster in the field. The book recommends having both types of meals with you for variety and flexibility. You can also dehydrate canned foods like vegetables or canned chicken, tuna or salmon and use them in your recipes.
This book is concise and a fast read, but packs a lot of information. This means that you need to pay attention to pick up all the important points. Fully half of the book gives infomration on dehydrating and meal planning as well as other important instructions and the other half gives some excellent recipes.
One important point (based on experience) is to be sure to try the recipes at home on the same stove and cooking utensels that you will have in the field. You want to make sure that you have everything you need and know how to use it BEFORE you are in the field and cold and wet and tired and hungry. That's not a good time to find out that you need another pot or that your pot isn't large enough to properly prepare your recipes!
"Trail Food" is all you need to dehydrate your own meals, but a few other general books on dehydrating wouldn't hurt to help you gain a full understanding of all the nuances of dehydrating.

Of the 400+ pages only 190 of them are of any use to me. I use a crockpot because it is simple and tasty cooking. So, I was expecting alot of main dish recipies. And I was also expecting them all to be for the crockpot. There is over 60 pages of recipes that do not use the crockpot. There is over 125 pages dedicated to beverages, soups, breads, and desserts. I have never met anyone who has made hot chocolate or apple bread in a crockpot. Of the 190 pages of worth. only 25 pages were the type of recipies that I was looking for. ie. the chop-it up and throw it in the pot type. everything else involved browning or braising or some other type of stove technique. I guess I'm just the kind of cook who doesn't want to screw around with browning anything. I bought this specifically because of the reviews on amazon. Hopefully this review will speak to those of you like me that are not chefs and are just looking for something easy and tasty to cook.

I purchased this book because we have cholesterol issues in the family, and so far, I've made 3 or 4 recipes involving beef. They've been very dry and not visually appealing (with kids, this is important!:)) I've found most of the entrees have been time consuming to prepare as well, lots of ingredients. Truthfully, the only thing I'm enjoying from the book is the information in the beginning about cholesterol and how it affects your health- lots of great informative points on this but the recipes are just not very tasty. I also own American Heart Association's Meals in Minutes, which is much better.

Well, low carb has been all the rage for sometime now although the fad seems to be slowing down somewhat. But not before TV's spunkiest cook can put her stamp on low carb as Rachael Ray does in her latest book. At 256 pages this is Rachael's largest book yet. I've never quite been able to get meals done in 30 minutes. i guess it probably helps having good editors and a staff but even at 45 minutes or so I've enjoyed every one of Rachael's books. It's good food where taste is first, not fancy presntation and ingredients that have you haunting exotic food stores to find.
The recipes here are not all that low-carb so don't be put off by thinking it's a diet cook book. It's just another great one from Rachael where carbs are used in moderation, but not at the sacrifice of taste. Call them good-sense carb recipes as opposed to low-carb. There's plenty of bread and pasta to be found inside. With all her books the emphasis is on good food and good food done fast and this one, like the previous ones, is right on the mark. Wonderful Italian and Mexican dishes, burgers, even desserts. And it all comes to you in Rachael's endearing, homey way of writing that comes across so well on TV. With her new publisher now being a part of Random House, the book is much more well-presented than her previous ones. Bolder colors that stand out and just plain look better.

The first 27 pages of this book consist of "tips" for losing weight. This includes things such as:
-the Biggest Loser diet in a nutshell
-how to keep a food journal
-how to read labels
-a section where the Biggest Losers from the show share their favorite foods in various categories such as "their top 20 low cal foods", "their top 20 evening snacks", or "their top 20 low cal desserts."
Then comes the part you likely got the book for: the calorie counter. HOWEVER, this is not simply a book that gives you ONLY the amount of calories in a food item, no, The Biggest Loser Calorie Counter: The Quick and Easy Guide to Thousands of Foods from Grocery Stores and Popular Restaurants--As Seen on NBC's Hit Show! also gives you the amount of protein, carbs, fiber, sugar, fat, saturated fat, and sodium (which is really good for those with heart or blood pressure issues) in a food item. Know too that in this particular calorie counter, food items are arranged in alphabetical order by "groups" such as "beverages" "desserts" or "pasta".
The book ends with a "dining out" section, which is where you can find info on foods in your favorite restaurants- well, maybe not ALL your favorite restaurants, but a lot of them. Also need to mention that the book can fit in an average-sized purse so you can take it along when eating out (if you're a guy, you'll just have to tote it around).
A very well-organized and handy book that should help many dieters on their quest for a healthier body, I give it 5 stars easy. Overweight people suffering from plantar fasciitis might also be interested in The 5-Minute Plantar Fasciitis Solution.

My husband and I are almost done with Stage One of this diet and so far are very impressed. We haven't felt hungry (except when we skipped snacks) and it's been incredibly easy to stick to. The food is incredible, it tastes so good that it's hard to believe that this is a diet. Both of us have also lost weight which is, of course, the goal.
To those who complain about the cooking, we found that there is cooking to be done, but it's so easy and quick it isn't a chore. For us it helped break us out of the delivery rut and gave us a way to always know what was for dinner--a huge help in our indecisive house. It also reinforced what a healthy portion size is for adults which is something we needed to learn.
To those who are concerned with the lack of exercise, this isn't an exercise book. Exercise is a healthy part of living, but studies have shown that it doesn't really help with weight loss. It's almost impossible to work out enough to burn the calories you're taking in if you aren't paying attention to that. I'm doing this along with Jillian Michaels - 30 Day Shredand I'm having great success, my husband is just dieting and he's having equal success.
My one quibble with the book is that it needs editing. The page numbers to the recipes in the menu plans do not always line up with the recipe in the back of the book. It's not hard to find what you're looking for since you're usually in the correct section but it's really annoying, especially when some dishes have very similar names and can be easily confused. I'm using the paperback version, so I don't know if this also applies to the hardcover version.
If you're thinking of trying this diet, you should try it.

`The Cast Iron Skillet Cookbook' by mother and daughter, Sharon Kramis and Julie Kramis Hearne, has roots deep in American culinary tradition based on both the subject and the fact that Kramis senior is a James Beard protégé from Beard's western cooking lessons. Based on the Beard / West Coast connection, the authors get a very nice blurb from senior Beard assistant Marion Cunningham.
This is very much of a `comfort food' rather than a `gourmet' oriented book, with many of the potential weaknesses to which this kind of book can fall prey. The best thing about this book is that in spite of some weaknesses in keeping on message, this is a really nice book to have if you like cooking with cast iron cookware.
The most obvious weakness in the book is that even though both the title and the subtitle, `Recipes for the Best Pan in Your Kitchen' suggest that the book is all about the classic ten (10) to twelve (12) inch skillet, the book actually contains recipes for a wide range of cast iron ware, including Dutch ovens, grills, griddles, popover pans, and special molds.
The thing I miss most in this book is a clear explanation of why the seasoned cast iron skillet is better for some tasks than any other cookware material. My understanding is that well seasoned cast iron has the non-stick advantages of a Teflon coated pan without the weakness of teflon in giving a good sear or good color to sautéed protein. Cast iron is not as responsive to heat changes as copper or aluminum, but this is its strong point when it comes to maintaining heat when you add room temperature or cold food to a hot pan. This advantage is especially good when you are cooking on an electric range, where the power to the heating coil turns on and off to maintain a particular level of heat. Thus, the heat in a pan on an electric element may fluctuate much more widely than the same pot on a gas burner. Another advantage is that cast iron is both virtually indestructible and unwarpable. So, a carefully maintained pan is good for one or more lifetimes, at least. According to Alton Brown's excellent `Gear for Your Kitchen', the down side of cast iron is that it is just a bit brittle so that it can literally shatter if dropped hard enough and it is prone to corrosion. It is also highly susceptible to rust, leading to pitting. And, if your seasoning is less than perfect, an acidic dish can easily leach iron from the pot, leading to an unpleasant taste.
It you limit yourself to the recipes for the skillet, you may also feel that many of the recipes are not necessarily optimized in a cast iron skillet. While the cast iron pan is a real champ in sautéing, browning, and cooking quickbreads such as pancakes, I think it's advantages really do not come into play when you are frying in oil or braising. While the authors briefly allude to enameled ware, I personally find that good enameled cast iron may be as good or better than bare cast iron for braising, especially the French `bistro pans' (flat two handled saute' pan shapes with heavy lids) and marmites (large casseroles with heavy lids). The authors' recipes clearly exceed their material when they give dishes such as a paella for which there are classic pan shapes and materials which are not cast iron.
The recipes in this book are almost all relatively simple, with `just enough' detail to enable an experienced amateur cook to be able to execute them. These are not gourmet recipes. They are `good enough' for easy home cooking. This means the recipes include some probably mistaken cooking lore such as the notion that searing protein seals in moisture. It also includes instructions with almost comically mistaken statements such as the Pecan Sticky Buns recipe which instructs us to put the ingredients into a mixing bowl with a dough hook attachment. This will be easily understood by most to be referring to an electric mixer and attachment, but it demonstrates Sasquatch Books typical weaknesses in copy editing.
On the positive side, I am really willing to accept the authors' opinion that a good cast iron pan is an excellent substitute for a wok for stir fried recipes. A cast iron pan will never go higher than the maximum temperature of the burner, but it will maintain a high temperature better than a thinner pan or a pan of more highly conductive material.
The selection of recipes is wide enough so that this little book will go a long way toward filling several different cooking application niches. The two most useful applications by far are the recipes for breakfast and for outdoor cooking. In fact, the authors would have done well to devoting more space to outdoor cooking, as cooking over an open fire is where cast iron can really come into its own. And, the book does not limit itself to all the conventional classics. Some of the more interesting recipes for breakfast are the Dutch baby and the savory Dutch baby, both of which are dishes that fill the pan. Other dishes that fill the pan such as apple tarts and skillet breads are just the thing to have handy for outdoor cookery.
There are some breads that I would not do in cast iron. I have reservations about an Irish soda bread getting the right kind of heat when baked in a pan with 3 inch high sides. The scones recipe is also a little suspect for the same reasons. The scones recipe is also suspect in that it calls for margarine instead of butter or lard and incorporates this fat with an electric mixer, where most pastry experts would call for the fat to be worked in carefully with the fingers or a pastry cutter.

I loved reading this book. I gathered encouragement and practical tips on every page. The author's personal stories and humor make this a book that is fun to pick up and hard to put down. The book motivated me to plan ahead for cooking, invite others over more often, and do simple things such as lighting a candle at dinner to make family time feel more special. She gives great tips for cleaning that actually made me itch to pull out my cleansers and tackle my housecleaning! I would recommend this book to anyone, old or young, who likes practical suggestions shared in a warm, conversational tone. Tea, anyone?

When diabetics think of diet, the word that comes to mind is restriction. As you read and work with this volume, which is much more than a cookbook, you'll lose the negativity that governs so many diabetics' thinking, and feeling, about food. It's a liberating volume.
Plus the recipes are easy, interesting, and exciting. For the recipes that I've tried, I found all the ingredients readily available in any supermarket. Preparation methods and times are keyed to busy lifestyles. Most take a half-hour or less.
But more importantly, the information about food and meals is presented in such an engaging way that I found myself excited about working on my diet. Believe me, until I read this book, about the last thing I wanted to do was read a diabetic cookbook. To me the very idea of a diabetic cookbook previously had been one of rules, restrictions, no-nos, and dullness.
From the very first page -- on which Dr Rubin and Ms Stach help you figure out exactly and specifically what your daily food intake ought to be, given your own individual condition, -- the authors are intent on making eating fun, and a positive, integral element in controlling your diabetes.
Dr. Rubin clearly presents information on such recent developments as the glycemic index and on how to time medications around meal times. His insights on how to deal with medications when eating out are enormously helpful.
This a modern book, keyed not only to science and nutrition, but also to our lifestyles. The authors don't utter instructions - they walk you through typical experiences. I travel a lot and learned a lot from the "road trips" in the book where in the authors actually sit you down in restaurants as varied as McDonald's, Denny's, and even the Ritz Carlton.
"Diabetes Cookbook for Dummies" is full of real-life insight, and is written in a friendly, companionable fashion.
As a diabetic, thinking about diet used to just give me a headache. Now, as a result of having read and absorbed so much of the information in Dr. Rubin's "Diabetes Cookbook for Dummies", diet is no longer a pitfall and a burden, but fun, and a powerful tool in controlling my diabetes.
This is the one food book a diabetic needs. It's the food book every diabetic should have.

I think the title of this book is quite misleading. I'm giving it two stars because I think the author is representing it as something it's not: "gourmet food".
While the recipes are not complicated, most of them are far TOO simple. Over and over, I kept asking myself, "for THIS I need a recipe book??" For example, "Cucumber Pizza", which sounds intriguing, is nothing more than chopped olives on slices of cucumber. "Scrambled Eggs", which sounds like something you wouldn't find in any ordinary raw food recipe book is -- are you ready for this? -- 3 ripe avocados mashed in a bowl, add salt and pepper! The "salad" recipes are the most basic of salads ... if you can chop some vegetables and lettuce into a bowl, add some lemon juice, olive oil and your favorite seasonings, you already know how to make most of the salads in this book.
There are several different nut milk recipes, each with a fancy, delicious-sounding name, but they're all the exact same recipe ... only the kind of nut you use is different.
Many of the recipes call for the pulp left over from making nut milk, and some of the soup recipes require nut milk. So unless you've taken the time to make nut milk, and have saved a supply of the pulp, you're out of luck.
One problem I have with many raw food recipe books is the inordinate amount of nuts, seeds and avocados called for. One recipe in this book calls for 5 avocados to make a dish that serves 3 people (just about all the recipes in the book make 3 servings). A taco recipe calls for 2 cups of soaked sunflower seeds in the pate', plus an avocado in the filling, and another cup of sunflower seeds to make the "sour cream" topping ... serves 3. I don't like gorging on fats, even if they are the healthy kind.
Some recipes call for coconuts, which is a no-go for me, because I don't want to have to deal with cracking coconuts and scraping out the flesh, etc. One recipe (that makes 3 servings) calls for 3 young coconuts.
I'm a big proponent of raw foods, and have a large collection of raw food recipe books. For "quick and simple" recipes, I especially like Raw Food Made Easy for 1 or 2 People, by Jennifer Cornbleet. Raw Foods for Busy People by Jordan Maerin is another favorite. But I cannot recommend Alive in 5, for all the reasons mentioned above. Perhaps if it were titled more honestly, something like "Dishes You Really Don't Need a Recipe Book For", I wouldn't have been so disappointed with it. I'm not saying there aren't some tasty combinations of foods in this book, but many of them are just TOO simple. To call it "Gourmet Meals" is misleading.

I purchased this book as I began my own research into adapting a pH balanced diet. It has been very helpful. I also believe it is easier to read and absorb the information over some of the other books on the same subject. It offers an easy to follow diet, if one wants to go 100% into the program. For others, the information provided is easy to adapt into any diet program. Simple to follow recipes are included too, some I have tried with good results.

I love a cookbook with pictures. This one not only gives you pictures but lots of money saving, delicious meals. My favorite is the Chicken Pot Pie recipe. We substituted frozen veggies without peas and used chicken of mushroom soup with some garlic. It was AMAZING. A friend of mine used fresh vegetables and loved it as well. It goes a long way and you can do a double recipe but one recipe's worth of the topping to save carbs. A great purchase!
I would recommend this to anyone.
